Homework
2-4 hours per week. Learners will be expected to complete three baking challenges every week. These bakes vary widely in times, with the longest being French bread, which will take several hours for proofing and rising.

Class Experience

Intermediate - Advanced Level
Whether you're new to baking or an old pro, this class will improve and refine your baking skills with guided videos, new recipes, and fun challenges! In a format inspired by the Great British Baking Show, each week will be themed. Every Monday, learners will receive their "signature challenge" in the form of a video presentation from the teacher guiding them through the process of the bake. They will be given many opportunities to tweak the recipes and bring their own flavors and ideas to the bakes! They will have the opportunity to post their bakes in the online classroom, comment on their peers' bakes, and discuss how they felt the week went and what they learned.

Schedule
Week One: Cakes - Learners will work through a guided video lesson to bake a basic vanilla cake with buttercream frosting. They are free to add their own different flavorings if desired. They will also be instructed on basic frosting equipment and techniques. 

Week Two: Cookies/Biscuits - Our video lesson this week will focus on tuiles . We will learn about the proper way to mix, shape, and bake the thin, crisp cookies, with options to add different flavorings such as citrus zest.

Week Three: Bread - We will tackle the scary (but easier than you'd think) French baguette. Learners will bake along with a video and learn the importance of weighing ingredients, how to gently handle and shape the bread dough, and the French technique of baking in a steamy oven.

Week Four: Desserts - Dessert week will contain a video lesson about meringue cookies. Meringue is an intimidating bake for some, but learners will see how simple it can be and have fun with their designs as they bake!

Week Five: Pie - We'll take a trip to the savory side by making meat pies. Learners will bake along with me in a video as they learn how to make a pie crust, techniques to avoid overfilling their pies, and how to avoid the infamous "soggy bottom." (Learners can use any filling they would like, including vegetarian.)

Week Six: Pastry - We saved the scariest for last! This week's signature challenge will be eclairs. The video lesson will teach learners how to make and pipe choux pastry, chocolate ganache, and pastry cream.

Other Details

Parental Guidance
Learners will be expected to work with cooking equipment such as ovens, stove tops, electric mixers, and knives. Please ensure that your child can do so safely and is properly supervised. Also, be advised that recipes will likely contain common allergens, such as wheat, dairy, eggs, and nuts. Learners are free to make accommodations as needed.
Pre-Requisites
Learners should be familiar with measuring ingredients and using ovens and stoves safely.
Supply List
Learners will need a variety of baking ingredients and equipment including, but not limited to electric mixers, measuring spoons, and cups, mixing bowls, baking pans, pie tins, etc.
The list of ingredients needed will change each week. For the first week, learners will require:
Cake flour
Salt
Baking powder
Baking soda
Unsalted butter
Sugar
Eggs
Vanilla extract
Buttermilk
Powdered sugar
Heavy whipping cream
Parchment paper
Cake tins
Mixing bowls and spoons
Measuring cups and spoons
Electric mixer
Piping bag and tips
Additionally, anything that learners would like for additional flavorings/decorations.

Learners will not need to use any apps or websites beyond the standard Outschool tools.

Bachelor's Degree in Education from Brigham Young University
Hello! My name is Mary Probst and I am so excited to be teaching on the Outschool platform.

I studied English Education at Brigham Young University. I graduated in 2015 after taking courses in a wide variety of literature, literary analysis, writing, and grammar courses. I also studied history, German, and comedy writing! During my practicum, I worked with a 12th grade AP literature class and a 6th grade ELA class in Utah public schools.

I spent my first year after graduation teaching 7th grade ELA in Payson, UT. When my family moved to Kentucky, I taught 6th grade remedial reading classes in Shepherdsville, KY. At both schools, my students not only improved their test scores, but also developed a love of reading and writing. Several students who said they hated reading ended the year carrying a book at all times in their backpacks and reading for fun during their free time.

When my first daughter was born in 2017, I switched to online teaching. I first taught ESL with VIPKID, then moved to Outschool, where I am privileged to teach a wider variety of courses.

I bring the best parts of my training and experience to the Outschool classroom. I utilize scaffolding to demonstrate a skill, then slowly allow learners more and more freedom until they are able to demonstrate that skill completely on their own. I facilitate discussion instead of simply lecturing and encourage questioning and growth mindset in my classes.
