In this one-time science class, students will learn about Celiac Disease.  The class will begin with a scientific explanation of Celiac Disease, and an explanation of the gluten-free diet that must be followed to control the disease.  We will discuss the interesting history of the disease, and gain an understanding of why diagnosis rates have increased over history.
