Baking & Decorating: Buttercream Unicorn Cake & Royal Icing Cookies(FLEX)

Class Experience

This is a FLEX class, which means your child will be able to watch the videos during the time that works best for their schedule and at their own convenience!  I never want your student to feel rushed, and I will always strive to convey an encouraging, patient style of teaching throughout the process.  I want students to have fun while they learn!  I will be going step-by-step through the entire process from baking to the finished, decorated masterpiece!  I will be available for your student every step of the way if they have any questions or need encouragement.  The students will be in a community of students who are creating together and get to share their experiences through messages and photographs of their work.

Calling all unicorn fans!  This cake can be enjoyed by all ages!  Whether your child has been wanting to try baking or is a pro, either will fit right in.  This will be a fun time of learning, creating, and encouraging each other as we work on our cakes and cookies!  The unicorn themed cake and cookies would be fun to bake for a birthday for a little girl or a teen, a play date, or just to be enjoyed by friends and family. 

First video:  We will learn how to bake a box cake in either a 6” or 8” round pan (your choice) as we walk step-by-step through the process.  Along the way, I will Include tips that learners can apply to baking and cooking for years to come.  These tips include: how to crack an egg, what to do if shells get in the batter, why butter for this recipe should be at room temperature, and why we should spray our cake pans over the sink.  The students will learn how to use the baking tools to cut the cake evenly across the top and prepare the cake for decorating.  

Second video:  We will go through the decorating process to create a unicorn cake and learn how to make multi-colored buttercream frosting.  

Third video:  We will move on to learn how to make my family’s favorite sugar cookies (they taste delicious).  

Fourth video:  We will finish up our time together by learning how to make royal icing and then use the icing to decorate our cookies.  The icing on the cookies will come out smooth and look professional.

While students work and learn at their own convenience, there will also be a lot of interaction between the students in the class and the teacher all throughout the time that we are together.  We will play a game where I ask questions about who has baked a cake before, what kind of cake it was, what is their favorite theme for a decorated cake, what is the prettiest cake they’ve seen and where did they see it, and what cakes and baked goods they would like to make in the future.  The students can respond in the classroom and we can enjoy seeing everyone’s answers.  The students will be asked to submit photos, comment on what they like about other students’ work, share what they found most challenging and most rewarding about the decorating process, ask questions, and get feedback!  My goal is to really let the students feel the camaraderie of working together on the same project and share experiences.  We will have a fun time together as we create and share!

Parental Guidance
Parental supervision is advised, as we will be using a hot oven, some sharp tools, and other supplies that require supervision for safe use. It is always a good idea to make sure that there are no ingredients that your students may be using during the baking and decorating process that could be possible allergens for your student.

A lot of these items can be found in Dollar General, Michaels, Walmart, and some in Joanns.  Joanns and Michaels both accept online coupons.

For cake:

2- Betty Crocker Super moist cake mix in the flavor you want.  (If you chose a different box cake, that’s okay, but you will just need to make sure it calls for 3 eggs, and 1/2 cup oil or adjust your ingredients according to the directions on your box)
6 eggs
2 cups water
1 cup vegetable oil
Non-stick cooking spray

For cake frosting:

For crumb coat in video 1:

2 cups(4 sticks) softened butter
2 teaspoons vanilla
16 teaspoons milk
8 cups powdered (confectioners) sugar

For frosting to decorate the unicorn:

4 cups(8 sticks) softened butter
4 teaspoons vanilla
32 teaspoons milk
16 cups powdered (confectioners) sugar


For cookie dough:

2 1/4 cups Flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup unsalted butter (Softened to room temperature)
3/4 cup granulated (white) sugar1 large egg, at room temperature
2 teaspoons pure vanilla extract
1/4 or 1/2 teaspoon almond extract (optional, but it makes a great flavor)

For cookie icing:

Confectioners’ (powdered) sugar (we will be using 4 cups per recipe)
Meringue powder (we will be using 3 Tbsp per recipe)(Michaels, Walmart)
Water

I have a bachelor’s degree in art and I have always enjoyed using my creativity in everything, including baking!  For many years, I have been making themed cakes my children’s birthday parties, and now I want to pass on the joy of baking to my students!  I have learned a variety of candy making techniques from a class at a local bake shop.  My daughter is an avid baker and I have a lot of fun assisting her with baking and decorating cakes and cookies on a regular basis.
