I have a PhD in Public Health and I am a Registered Dietitian. I have been teaching nutrition to college students and vulnerable populations for 7 years.

Assignments will be given to test student knowledge and understanding of concepts introduced. Assignments are not intended to be overly time consuming, but rather a fun way to test their learning. Assignments are listed in the course description area. Assignments include quizzes, discussions, and mini projects.
