Ever wanted to make pop tarts from scratch, with your own personalized fillings and perfectly flaky pastry? This course will take you through each step of creating gourmet pop tarts, from dough preparation to crafting unique fillings and glazes. By the end, you’ll be able to make customized, delicious pop tarts that are a step up from store-bought varieties!

In this course, you’ll learn how to:
Make pastry dough from scratch.
Prepare a variety of sweet fillings, including fruit, chocolate, and more.
Create decorative glazes and finishing touches for your pop tarts.
Assemble and bake your pop tarts to perfection.

Topics covered:
Ingredients: Understanding the role of each ingredient in your pastry and fillings.
Dough Preparation: Techniques for creating and handling flaky pastry dough.
Fillings: Exploring both classic and innovative filling ideas.
Baking: Tips on baking times, temperature control, and achieving a golden crust.
Decorating: Crafting glazes and artistic finishing techniques.

The class is divided into three main sections:
Lecture & Demo: We’ll begin with an overview of ingredients and techniques, followed by a live demonstration of each step in the process.
Hands-On Practice: You’ll make your own dough, fillings, and glazes, with time for guided practice at every stage.
Q&A and Feedback: After the session, you’ll have opportunities to ask questions and receive personalized feedback on your progress.

I will teach through a combination of live demonstrations and step-by-step instructions. You’ll watch how I prepare each element of the pop tart and then immediately put those skills into practice. We’ll go at a steady pace, ensuring you understand each step before moving on to the next.

 Students will make a short pastry crust and fillings. Students will learn how to roll pastry crust, cook filling and bake.

Parents or guardians should ensure that younger children are closely supervised, particularly when using sharp tools (e.g., knives, graters) or heat sources (stove, oven, microwave). An adult should handle or assist with these tasks for children under 10. Skills Development: This class is designed to teach basic kitchen skills, including measuring ingredients, mixing, chopping (with guidance), and using kitchen equipment. Parents are encouraged to help younger children with tasks requiring fine motor skills or that involve complex instructions. Safety Precautions: Heat: Teach children about the dangers of hot surfaces and the importance of using oven mitts and taking care around stoves or ovens. Sharp Objects: Always supervise knife use, and start with child-safe knives for younger children. Explain safe chopping techniques. Hygiene: Emphasize the importance of washing hands before and during cooking, especially after handling raw meat, eggs, or other potentially hazardous foods. Allergens: Check all recipes for potential allergens such as nuts, dairy, gluten, etc. Parents should substitute ingredients if necessary to accommodate allergies or dietary restrictions. Behavioral Expectations: Encourage children to focus, follow instructions, and be patient as cooking often involves waiting. Promote teamwork and taking turns when in group settings. Cooking Space: Ensure the workspace is clean, organized, and free from hazards. Arrange tools and ingredients within easy reach for the child to promote independence under supervision.
Supply List
Pop Tarts
Yield: 4-6

Crust
2 cups Flour
12 T Butter, cold, diced
⅓ - ⅔  cups Water, cold
1 tsp. Salt
2 tsp. Sugar

Method of Preparation
1. Mix flour, sugar and salt together in a bowl.
2. Cut in the butter using a pastry blender/cutter or fork until the mixture resembles pea sized balls.
3. Add cold water to form dough with your hands.
4. Roll out dough onto a lightly floured surface to ½ “ thick. Cut into rectangles.
5. Fill the rectangle with filling, top with another rectangle of dough and crimp with a fork to close. If desired, you may brush an egg wash (1 beaten egg) over top for more browning & a glossier exterior. 
6. Bake at 425F for 20 mins or until golden brown.
7. Once cooled, top with frosting if desired. 

Frosting
3 cups Powdered Sugar, sifted
1 ½ tsp. Vanilla
1- 2 T Milk
⅓ cup Butter

Method of Preparation
1. Melt butter
2. Mix all ingredients in a bowl with a hand mixer until smooth



Fruit Filling

2 cups Fruit (Strawberries, blueberries, etc.)
1 T Cornstarch
½ cup Sugar
¼ tsp. Vanilla

Method of Preparation
1. Place all ingredients into a sauce pot and bring to a boil for 2 mins. 
2. Remove from heat to cool.

Brown Sugar Filling

½ cup Butter
1 cup Brown Sugar
2 T Flour
2 T Cornstarch
2 tsp. Cinnamon

Method of Preparation
1. Melt sugar and butter over medium heat.
2. Add remaining ingredients and whisk. 
3. Cook until mixture bubbles and then cool.
