In this class, students will learn about a 'buffet' of food history, cultural cuisine and social change.

This course has been designed to assist students in developing culinary art skills while learning a wide range of knowledge about various topics relating to the intersection of race, food and culinary history. Each week, students will receive:

• Visual instruction on creating the weekly recipe
• A one or two page recipe print out
• An interactive video lesson about the topic at-hand
• 1-on-1 communication and feedback

At the end of the course, students will be provided with a printable course cookbook detailing each recipe and offering short historical facts to compliment the full-length lessons.

Recipes & Grocery Lists will be shared a week before the instructional video is shared. Students have the option of preparing the meals or a creative art project (ex: political cartoon, watercolor painting, acrostic poem, etc.) relating to that week's topic. They should share photos in the Outschool Classroom of their final creation.

Week 6: Picnics: A Family Event
   • Weekly Recipe: Gourmet Grilled Cheese, Fruit Salads & Lemonade
Week 7: Juneteenth: A Liberated History
   • Weekly Recipe: Black Eyed Peas & Cornbread & Strawberry Hibiscus Tea 
Week 8: Aunt Jemima's Tale
   • Weekly Recipe Pancakes with Fruit Topping
Week 9: Food For Thought ~ A Buffet of Food History
   • Weekly Recipe: Chef's Choice
Week 10: The History of African American Birthday Celebrations
   • Weekly Recipe: Chocolate Cake with Sprinkles
Week 11: A 'Pizza' Black Italian History
   • Weekly Recipe: Pizza (You Choose The Toppings)
Week 12: Medical Racism & Implicit Bias
   • Weekly Recipe: Pesto Sub Sandwiches
Week 13: Black Gardens & Self-Sufficiency 
   • Weekly Recipe: Garden Soup

Please note that this is a flex class. There will be no live meetings as each week, learners are presented with pre-recorded video lessons that include a live cooking demonstration, historical education and more. Learners are expected to interact with the  discussion board questions, games and jam boards in the classroom to develop a sense of community and ensure overall engagement and understanding. Learners can interact in a method that best suits them: writing responses to a post, making short videos or posting pictures as their response to the assignments. The instructor will check in on the responses and provide feedback and guidance throughout the duration of the course. 

Weekly videos will be available every Sunday at 5:00 PM PST

NOTE: Prior to the first lesson, students will receive kitchen safety information to review

Morgan Jael is a graduate of Washington University in St Louis where she earned her Bachelors of Arts Degree in African/African American Studies and participated in the Mellon Mays Undergraduate Research Fellowship where she surveyed the cultural experiences contributions of Black girls in the southern landscape in the 19th and 20th century. 

She is a history/social justice educator who has worked in both public and charter K-12 school spaces, with in-person and virtual experience. Her proudest moments as an educator include the successful creation and implementation of a social justice/history curriculum that led to her creating Black Girls Know Best, a community non-profit organization that amplifies Black girls voice through creative mediums. Most recently, she worked with the National Park Service's African American Civil Rights Network and Junior Ranger program, curating relevant and informative history content that supported the Network's growth.
