During this class, learners will explore foods, both bland and exotic, that American colonists enjoyed (or just tolerated). Through slides I present, we will examine how native food sources, the expertise of Native Americans, and seeds carried to the colonies by enslaved Africans influenced the diet of the American colonist. Cooking spaces and methods, as well as a few recipes of the time will be highlighted. All students will be encouraged to share their thoughts and ideas. Using a one page handout provided for download before class, students will create their own imaginary colonial meal. Each learner will have the opportunity to share that menu with the class, explaining how the ingredients would be gathered and prepared. After class is completed, modern versions of two recipes we discussed will be available in the classroom. There is no special experience of knowledge required for this class. Please note that I do not cancel classes for low enrollment. I love teaching to a single learner or group of students.

Students will practice making inferences and drawing conclusions as we examine how food sources influenced colonial meals.
