This is a quite demanding class. Students will learn about basic bio-chemistry as well as do research in small groups. I require video participation for this class if at all possible. Internet (browser) access during class is helpful. I will allow younger learners if they are able to follow the course curriculum. Students are not discouraged of any specific diet, e.g. vegetarian, vegan, paleo, keto etc. We research diets from a historical perspective and weigh the evidence. We also discuss animal rights and the reasons some people choose not to eat animal foods at all - or only certain animal foods. We also will address the potential dangers of any restrictive diet and the basic precautions that may need to be taken to address nutritional deficiencies. (e.g. most vegans need to supplement with iron and B12).
Some of the information is taken from my book: "Eating for Vibrant Health and Explosive Energy". A .pdf version is part of the course. If you'd like to check out book, you can find it on Amazon: https://www.amazon.com/gp/product/1980570035
