Students will learn how to make dinners all by themselves using these actually simple cooking recipes!

My name is Ms. Brooke and I have always struggled to make myself dinner. Either there are too many ingredients, my allergies conflict with the ingredients, or I just don't have the time for an elaborate meal. No matter the reason, I ended up getting so overwhelmed with my cooking! I now have a handful of simple recipes I have on repeat that use a small amount of ingredients, have minimal prep time, and come out tasting delicious. I am so excited to share what I have learned with your students so they can become competent in the kitchen at a young age.

Siblings are welcome to join, but all learners must be enrolled to be on camera. Please reach out to Ms. Brooke to discuss sibling discounts for this course.

Each class will ultimately be the same format (see below for recipe options).
1. Make sure students have necessary supplies and ingredients (and find substitutions if they do not)
2. Prep the oven and our meal
3. While meals are cooking, we will discuss what learners will be making for the following week
4. Try our food
5. Share with others

Course Meal Options by week (please see "materials" for a complete recipe breakdown by dish). Dates are listed the Sunday you will be charged. Class is the Friday after the listed date.

Notes:
* If your learner has any allergies or dietary restrictions, please make that known to Ms. Brooke so I can make the appropriate accommodations to recipes for your learner. I have several allergens and have found ways to accommodate many other restrictions.
* Please note that it is possible that students will request foods that do not create a balanced meal. Please use your best judgement on additional food items as needed so that students get proper nutrition.

Please use your best judgement on how much of this work your learners will be able to do independently. While most dishes do not require knives, students will still be using the oven and/or stove, so it is important that there is always an adult present during class in case a kitchen emergency arises. If there are any allergies or dietary restrictions, please let Ms. Brooke know at least 24 hours in advance so we can make proper substitutions. I personally have a nightshade and egg allergy, so none of my meals include either of those allergens. If your learner has nut, wheat, dairy, or soy allergens, please let me know upon signing up for the class so I can make ingredient alternative suggestions in advance. Most of these dishes can be turned into vegan/vegetarian options with a meat/dairy substitute.

Kitchen Utensils that are used for nearly every meal:
- Baking sheet with aluminum foil
- Sauce pan
- Rice cooker (or a pot with lid)
- Colander or other strainer
- Fork or whisk
- 2 mixing bowls
- Measuring cups and spoons
- An oven
- A stove
- Knife (only needed when using chicken)
- Heat safe spoon


Food items by dish type:

- Spaghetti and meatballs (with optional homemade pasta sauce)
ground pork, egg, salt, garlic powder (or other seasoning), panko, ketchup, parmesan

- Salmon and rice (with veggies of choice)
salmon (or other fish), salt, garlic powder (or other seasoning), olive oil, rice, vegetables
for brown sugar option, swap garlic powder for garlic cloves and bring brown sugar and lemon

- Chicken and rice (with veggies of choice)

- Chicken fettuccini alfredo (with homemade alfredo sauce)

noodles, butter, flour, salt, milk, shredded cheese, optional meat (such as ham or leftover pork / meatballs)

warm water, sugar, active dry yeast, olive oil, slat, flour

- Alfredo biscuit bomb
chicken, broccoli, alfredo sauce, can of refrigerated buttermilk biscuits, mozzarella cheese, butter, bread crumbs, parmesan cheese, garlic powder

- Homemade hamburger
ground beef (or other meat), Worcestershire sauce, salt, garlic, pepper, burger buns, and optional toppings: cheese, tomatoes, lettuce, onions, bacon

- Flatbread pizza
Water, flour, olive oil, salt, pasta sauce, mozzarella cheese, and toppings of choice

- Flatbread pizza dessert
Water, flour, salt, confectioners' sugar, cream cheese, butter, vanilla extract, fresh fruits of choice

- Steak
room-temperature steak, olive oil, salt, pepper, garlic powder, butter, thyme, green beans or other veggies for side

- Homemade pasta
semolina flour (or any flour - I will likely use bread flour), warm water, salt, sauce of choice

- Soft pretzels
active dry (or instant) yeast, salt, brown sugar, unsalted butter, flour, warm water, coarse sea salt, baking soda (optional cinnamon and sugar)

- Cinnamon rolls
flour, white sugar, brown sugar, powdered sugar, baking powder, salt, butter, milk, egg, cinnamon, cream cheese, vanilla extract

- Mini Lasagna Ravioli
oil, sausage links (casting removed), marinara sauce, salt, pepper, package of cheese ravioli, shredded mozzarella cheese, parsley

- Chicken Broccoli Shells
16oz alfredo sauce, chopped broccoli, diced cooked chicken, shredded cheddar cheese, shredded parmesan cheese, jumbo pasta shells

- Tacos
2lbs ground beef, cheddar cheese, shredded lettuce, taco seasoning (I use garlic, but you can either use a pre-made seasoning or can make one using equal parts of chili powder, garlic powder, onion powder, crushed red pepper flakes, oregano, and paprika)

- Chicken and dumpling soup
32oz chicken broth, cooked chicken, 10oz can condensed cream of chicken soup, buttermilk biscuits, chopped carrots, chopped celery, flour, garlic

- Fried rice
pre-cooked rice, vegetable oil, carrots, garlic, soy sauce, salt, pepper, egg, frozen peas (optional: onions, scallions, peppers)

- Churros
water, butter, granulated sugar, vanilla extract, flour, salt, 2 eggs, vegetable oil, cinnamon sugar, dark chocolate chips, heavy cream, ground cinnamon. Piping bag and star tip are helpful but not required (you can use a Ziplock bag with the tip cut).

- Donuts
flour, buttermilk, sugar, baking powder, salt, vegetable oil, powdered sugar

- Fudge
butter, brown sugar, evaporated milk, maple flavoring (or other flavoring of choice), vanilla extract, salt, powdered sugar

- Sugar cookies
butter, sugar, egg yolks, flour, milk, vanilla, powdered sugar, salt

- Lasagna
spaghetti sauce, diced tomatoes, water, egg, ricotta, Parmesan, parsley, basil, garlic, oregano, uncooked lasagna noodles, mozzarella

- Chocolate chip cookies
chocolate chips, flour, baking soda, salt, butter, white sugar, brown sugar, vanilla extract, eggs

- Burger bombs
buttermilk biscuits, ground beef, bacon, Worcestershire sauce, cheddar cheese, sesame seeds

- Strawberry shortcake
strawberries, flour, baking powder, salt, sugar, heavy cream, butter, whipped cream or cool whip

-leftover nachos
tortilla chips, butter, flour, milk, shredded cheese, meat (leftovers, beef, chicken, steak, etc.)

- super fudge brownies
butter, olive oil, cocoa powder, sugar, eggs, vanilla, salt, flour, chocolate chips

- cheesecake
graham crackers (ideally crumbs), butter, cream cheese, sugar, lemon juice, vanilla, salt, eggs, sour cream

- Hand pies
pre-made pie crust, flour, egg, water, fruit (cherry, apple, blueberry, peach, pear, banana, etc.), sugar, cornstarch vanilla, cinnamon

The following is a complete list of ingredients that I keep on hand. I generally do not stray from this list unless by student request.
- Meat (pork, salmon, chicken, beef, bacon, tofu)
- Eggs (I use "neat egg" due to allergies)
- Ketchup
- Sea salt
- Parmesan (grated)
- Garlic powder (or other favorite seasoning such as thyme, pepper, rosemary, basil, etc.)

- Veggies (broccoli and green beans are my favorites)

I teach all domains of science classes including Life Science, Physical Science, and Earth and Space Science. I enjoy incorporating engineering and STEM projects as I can in addition to valuable life skills such as discussion strategies, organizational tools, and identifying and managing emotions. I have over a decade of experience working with kids between 4 weeks and 17 years old. While my passion is science, I also offer math, social clubs, and circle time classes.

I am certified to teach middle school science and health/fitness courses. I have a Masters degree for teaching middle level science as well as a Bachelors degree for teaching secondary science. My Master’s Thesis was about how “Middle Schoolers Should Be S.T.R.E.A.M.ing” in which I studied the effectiveness of integrating Science, Technology, Research, Engineering, Art, and Math in middle school classrooms.

My goal is to get every student I meet excited about learning science - No matter their age! STEM fields are taking over our world and science teaches us the skills necessary to thrive in these fields such as analyzing, interpreting, and applying information. I strive to increase students’ curiosity and passion for STEM/STREAM through my own fascination of the field.

Some fun things about me are:

- I am obsessed with Yellowstone National Park
- I have 2 cats: Azlan (3 legged cat who knows tricks) and Kevin (4 legged kitty who thinks he’s a dog)
