Do you want to explore a different culture and one of the world’s healthiest cuisines while learning how to prepare beautiful and healthy food?

Join us for a unique Japanese-inspired food education online live course,
Japanese Cooking for Fun and Health - "Wa-Shokuiku - Learn. Eat. Cook Japanese!”

Through this course, you learn the principles of Japanese cuisine and food culture, and how to prepare healthy foods to strengthen bodies and minds. Our instructor provides an interactive presentation about Japanese food, culture and nutrition, demonstrates how to make Japanese food and leads students in cooking.

Many of the ingredients can be found in a standard supermarket. As needed, we can suggest substitutions. 

The course consists of 4 units (*) that focus on different topics to expose students to Japanese food and food culture which include:
•	Healthy and balanced eating 
•	Japanese manners and customs
•	Food-related issues in local and global communities

*4Units: 
1.	Popular Japanese Food - Okonomiyaki/Japanese savory pancake
2.	Food from the Sea - Sushi roll ( No raw fish is used. We can adjust for vegetarian or vegan diet)
3.	Japanese Sweets - Dorayaki/Japanese sweet filled pancake
4.	Bento – Japanese Lunch Box

Orientación para padres
Parents with young children are encouraged to assist their child in tasks like cutting and boiling water. When cooking with a stove and/or a knife is required, students with adult supervision can complete the cooking either during the class or after the class has ended. When a recipe calls for the use of a stove, students under the age of 12 need to have an adult on the premises. If the parent or guardian does not plan on being on the premises, please send us a message. Please note that the class duration may extend depending on how the cooking progresses.

All Lessons: Cutting board, plastic/table knife, measuring cups and spoons, mixing bowls and spoons
Lesson 1: 8 to10 -inch skillet, spatula for flipping, box grater 
Lesson 2: Sushi rolling matt or parchment paper cut to approximately 6 inches by 8 inches
Lesson 3: spatula for flipping
Lesson 4: scissors, 2 small custard cup or bowls, small pan, plastic wrap, small (6-8-inch) skillet, small plastic storage box for the bento box

[Lesson 1: Popular Japanese Food]
**Okonomiyaki (Japanese savory pancake) - Makes 2 6-inch pancakes** 
1 cup flour, 1/2 teaspoon salt, 1 cup water, 1 egg, 
2 cups shredded cabbage, 1 carrot shredded and/or 1/2 red bell pepper, seeded and cut into 1/2 – inch slices
1 medium onion or 4 scallions, sliced, 2 tablespoons oil, Sauce (1/4 cup bbq sauce, 1/4 cup ketchup,1 tablespoon soy sauce)
(Optional) 2 ham slices or 1/2 cup cooked chicken or 1 bacon slice (any meat)

[Lesson 2: Food from the Sea]
**Sushi roll with tuna, cucumber and avocado - Makes 4 rolls**
3 cups cooked short or medium grain rice* (1 1/2 cups raw uncooked sushi rice) - Please cook the rice in advance
3 tablespoons rice vinegar, 1 1/2 tablespoons sugar, 1/2 teaspoon salt
1 5-ounce can tuna in water (drained), 2 tablespoons mayonnaise, 1 teaspoon soy sauce
2 mini cucumbers cut into strips (skin on with seeds removed), 1 avocado, 1 teaspoon lemon juice
4 sheets of roasted seaweed (large, about 8 inch square)- nori 

[Lesson 3: Japanese Sweets]
**Dorayaki (Japanese sweet pancake) - Makes 4 Dorayaki**
1 cup flour, 1 teaspoon baking powder, 2 eggs, 1/2 cup sugar 
1 tablespoon honey, 1 teaspoon soy sauce, 2 1/2 tablespoons water, (Optional) 1 teaspoon mirin 
1 cup Japanese sweet azuki bean paste (tsubu-an) or substitute any jam 
(Optional) 4 strawberries

[Lesson 4: Bento]
2 cups cooked short or medium grain rice* (1 cup raw uncooked sushi rice) - Please cook the rice in advance
1 sheet roasted seaweed (nori), 1 hot dog, Optional: ketchup for dipping, 1 tablespoon canola oil
1 egg, 2 tablespoon water, 1 teaspoon sugar, 1 1/2 teaspoons soy sauce
1 mini cucumber or 1/2 regular cucumber, 1 teaspoon lemon juice, Salt
Red color food: 2 strawberries (If not available, 6 grapes, 4 raspberries or 1-2 cherry tomatoes)

Please cook the rice in advance and keep it warm. The recipe for cooking rice is included in the recipe file provided upon registration. We will also show you how to cook sushi rice at Lesson 1.

Recipes might be modified depending on participants needs.

Our instructors have been trained in the Wa-Shokuiku program material and have delivered these classes to hundreds of children over the past 3 years. Please be sure to let us know of any food allergies. All the ingredients that will be used in the lessons are listed in Learner Supply List. You are choosing the food for your children so please be aware that you can make substitutes where appropriate.
