Students will gain the experience of preparing a recipe from scratch using only healthy ingredients to create a heavenly-tasting treat. As we prepare our recipe together, students will learn many general baking tips as well as healthy cooking secrets. They will also learn how to substitute healthy ingredients into other favorite desserts and recipes, and why it is so important to do so! In this no-sugar-added recipe, we will use applesauce and honey as sweeteners, plain yogurt to add moisture, and lots of fresh fruit. Students will also learn about the amazing health benefits of blueberries and yogurt, in addition to the benefits of using organic, whole, and raw foods instead of standard processed ingredients. Since the purpose of this class is to learn to use healthy ingredients, it is highly recommended that you obtain the exact ingredients as listed in the "Materials" section below. If you are unable to do so, standard ingredients may be substituted, but will reduce the "healthiness" of your recipe. This recipe is best prepared by hand, using a wire whisk and a large bowl. Students will also need measuring cups and spoons, a standard muffin tin (for 12 muffins), paper baking cups (optional), and access to an oven. Students should have adult supervision unless they are familiar with the kitchen and have parents' permission to cook on their own.

Ingredients (exact amounts will be included in your welcome post): free-range or organic eggs, natural unsweetened applesauce, natural (raw) honey, plain nonfat yogurt (unsweetened), pure almond extract, aluminum-free baking powder, baking soda, sea salt, whole wheat flour, oat flour (see note below), and fresh organic blueberries (not frozen) Equipment: wire whisk and large mixing bowl, measuring cups and spoons, large spoon and/or spatula, muffin tin, paper baking cups or butter to grease muffin cups, access to an oven You will need 1 cup of oat flour. This can be purchased or made at home by placing 1½ cups of steel-cut or organic oats into a flour mill; most blenders and food processors will also work. It is best to prepare this before class.
