We will discuss the history and origins of some staple foods associated with Italian cuisine as well as regional variations.  Students will also look at what goes into planning a well balanced meal.

Students will prepare homemade gnocchi with a creamy fresh pesto sauce.

They will need to have:

mashed potatoes (these need to be prepared ahead)
all purpose flour
eggs
olive oil
Parmesan cheese 
salt
fresh basil
pignoli nuts (you can substitute with walnuts)
garlic
