In this eight-week FLEX class students will learn to make eight classic breakfast foods from scratch. 

There are NO LIVE MEETINGS for this class to allow students maximum flexibility to participate each week.  Student families purchase the supplies on their own each week, and prepare each dish using prerecorded detailed demonstrations. Students complete the assigned activities that provide opportunities to interact both with other students in class and with me, the teacher.  Though we will not be in a live video together, I will not leave you to learn on your own.  I will answer your questions, provide written or extra video recorded messages to help you, and check your progress as you post in our Outschool classroom.  You will be engaging with your peers throughout the course (see below).

Opportunities to interact with the teacher and other students include posting and responding in the Outschool classroom, sharing a written or video recorded reflection on what worked and what you would do differently, answering questions posed in the videos, and/or answering questions posted by other students in the classroom message board.

By Monday each week I will: (1) post a prerecorded video that demonstrates each step for the week's dish, and (2) post the activities for that week (see below).  I will check student posts, reflections and activities daily and respond throughout the week (within 24 hours).

Week 1: Introduce yourself in the Outschool classroom chat, Watch the CHOCOLATE CHIP PANCAKE demonstration video. Make pancakes! Post a picture of your beautiful creation on the Outschool classroom message board & complete a reflection.

Week 2: Participate in our breakfast FlipGrid. Watch the FARMER'S MARKET FRITTATA demonstration video. Prepare your frittata! Post a picture of your frittata and leave a message sharing your favorite toppings for pancakes what filling ingredients you chose.

Week 3: View your classmates' frittata pictures in the Outschool classroom message board, find someone who used the same fillings as you & leave them a positive message.  Find someone who likes a different fillings than you and leave them a positive message.  Watch the BANANA BERRY FRENCH TOAST demonstration video. Make french toast. Compare and contrast your pancake and french toast  cooking experiences with a picture or two, or a short video & let us know which one you prefer to eat. 

Week 4:   View classmates' cooking comparisons (pancake & french toast) in the Outschool classroom chat and comment one relevant "I like..." and one "I wonder..." about another classmate's experience. Watch the demonstration video for BREAKFAST BURRITOS.  Prepare breakfast burritos. Post about your experience rolling and toasting burritos, and what you would do differently next time (if anything).

Week 5: Watch the demonstration video for BLUEBERRY MUFFINS.  Prepare blueberry muffins. Post a picture of your muffins, and share one blueberry-related memory you have. Reflect personally (no need to post) on what went well and what you would do differently if you  made them again.

Week 6: Read your classmates' blueberry memory messages, and comment on one with a positive relevant note. Watch the DENVER OMELET demonstration video. Make at least one Denver omelet. Post a picture of you omelet (of a picture from your omelet making process) and let us know what you thought was the easiest part & what you thought was the hardest part of making an omelet. 

Week 7: View classmates' experiences on what was easy and hard about making an omelet in the Outschool classroom chat and comment one relevant "I like..." and one "I wonder..." about another classmate's experience. Watch the demonstration video for CINNAMON COFFEE CAKE. Make a delicious cinnamon coffee cake. Post the best picture you can get of the cut side of a piece of the cake (one that best shows your topping and filling layer at the same time)!

Week 8: View everyone's side view image of their coffee cake & remember how delicious your cake was!  Watch the demonstration video for BREAKFAST SANDWICHES. Make some savory sammys.  Post a picture and a parting message for the class in the Outschool classroom. 

This course provides the learner with the opportunity to learn new skills, and to prepare new recipes to share with their family. Students will build their confidence in the kitchen through the preparation of delicious food in a supportive environment.

This is a cooking class that involves the use of knives, and a stovetop or oven. Parents must be present in case of accidents or emergencies, and available if their student needs assistance. Students need not be experts, but should be familiar with knives. I will review knife safety in every class that uses knives, demonstrate each cut, and explain how the technique keeps us safe. At parent or student request I can provide an additional demonstration video if needed. Please make sure they have sharp knives and consider buying them their own chef's knife with a shorter blade meant for smaller hands. They should not use steak knives as a substitute. It is your responsibility to review the ingredients each week and to let me know if there are any allergies or sensitivities you need help with so I can help you find an alternative. Families should purchase supplies ahead of time and students should be prepared to cook with me in the video. The lesson in the video is in real time. The only exception to this is long baking times.

A pfd file with the supply list for the first week will be available upon enrollment. Each week the supply list will be posted in the Outschool classroom no later than Monday for that week.

    I am offering this class as an introductory class for older students to begin cooking classic meals from scratch.  I have been cooking, baking and feeding people my whole life.  My cooking focuses on foods that are whole, and natural as much as possible, but breakfast is a 'splurge' class for me!
    
    I will review safety and proper techniques every time we use: knives, a stovetop, or the oven. I will use clear and visible demonstrations as well as explain why we are using the specific techniques (why it is safer).
