In this *flex* course students will learn six dishes/drinks rooted in Mexican flavors over 4 weeks on a flexible weekly schedule.

Class Experience

In this four-week FLEX class students will learn to makes six Mexican dishes & drinks from scratch: street tacos with homemade corn tortillas, Pico de Gallo salsa (salsa fresca) & Guacamole, Chicken tortilla soup (Sopa Azteca), Mexican street corn (elote) and agua fresca.

There are NO LIVE MEETINGS for this class to allow students maximum flexibility to participate each week.  Opportunities to interact with the teacher and other students include posting and responding in the Outschool classroom, sharing a written or video recorded reflection on what worked and what you would do differently, answering questions posed in the videos, and/or answering questions posted by other students in the classroom message board.

By Monday each week I will: (1) post a prerecorded video that demonstrates each step for the week's dish, and (2) post the activities for that week (see below).  I will check student posts, reflections and activities and respond throughout the week.

Students watch the demonstration video for the week's topic and prepare the food for the week. Students complete the assigned activities that provide opportunities to interact both with other students in class and with me, the teacher.  Though we will not be in a live video together, I will not leave you to learn on your own.  I will answer your questions, provide written or recorded messages to help you, and check your progress as you post in our Outschool classroom.  You will be engaging with your peers throughout the course (see below).

Week 1: Introduce yourself in the Outschool classroom chat, Watch the street taco demonstration video. Make steak street tacos. Post a picture of your lovely taco creation & complete a reflection.

Week 2: Participate in our Mexican flavors FlipGrid. Watch demonstration video for pico de gallo and guacamole.  Prepare pico de gallo & guacamole. Compare and contrast your different recipe experiences with a picture or two, or a short video & let us know which one you prefer to eat. 

Week 3: View classmates' salsa/guacamole experiences in the Outschool classroom chat. Find someone who likes the same one as you & leave them an encouraging message.  Find someone who loves a different one than you and leave them an encouraging message. Watch the sopa azteca demonstration video. Make sopa azteca. Post a picture and tell us about the add-in ingredients you chose to use (or not use). Complete your reflection. 

Week 4:  View your classmates' soup comments and comment one "I like" and one "I wonder" about another classmate's soup & toppings. Watch the elote corn and agua fresca demonstration video. Prepare your corn & drinks. Post a picture of your elote & aqua fresca and leave a parting message for the class. 

This course provides the learner with the opportunity to learn new skills, and to prepare new recipes to share with their family. Students will build their confidence in the kitchen through the preparation of delicious healthy food in a supportive environment.

Other Details

Parental Guidance
This is a cooking course that involves the use of knives, an oven, and a stovetop. Because of the dangers involved parents must be present while their students are preparing food in case of accidents. Please see the ingredient list for each class for any allergies.

I am offering this class as a healthy introductory class for older students to begin cooking classic meals from scratch.  I have been cooking, baking and feeding people my whole life.  My cooking focuses on foods that are whole, and natural as much as possible. As a social studies teacher I enjoy bringing the stories behind the dishes into my classes.
