In this 5-week, self-paced cooking class, your teen will learn Japanese favorites that are sure to please the whole family, from sushi to homemade ramen.

Class Experience

US Grade 9 - 11
If you love Japanese food, this class is for you! We will make some of your Japanese restaurant favorites in this class. We will be making the following dishes:

Miso Soup
Tempura (We will make veggie tempura, but the technique would be the same for shrimp)
Teriyaki Chicken Bowl
Sushi (We will learn to make Maki Rolls, Inside Out Rolls, and Ngiri)
Homemade Ramen


I am available to assist with trying to modify recipes as needed to meet your dietary restrictions, though not all accommodations can be met.

Syllabus

5 Lessons
over 5 Weeks
Lesson 1:
Miso Soup
 Learn how to make your own dashi and turn that into Miso soup. 
Lesson 2:
Tempura
 Learn how to make a light and crispy tempura batter for vegetables (with directions on how to modify this for shrimp). 
Lesson 3:
Teriyaki Bowls
 Learn how to make bowls with rice, vegetables, protein, and homemade teriyaki sauce. 
Lesson 4:
Sushi
 In this lesson, you will learn how to make sushi rice, make maki rolls (rice on the inside), inside out rolls (rice on the outside), and nigiri (when you order 2 pieces of sushi at a restaurant, this is nigiri). A variety of fillings will also be discussed. 

Other Details

Parental Guidance
Students will be using knives and stovetops for this class. Please make sure your student feels comfortable with these items, or have parental supervision available. Allergies in these recipes: egg, wheat, soy, shellfish, fish (some modifications can be made, but not all can be accommodated)

Recipes are posted for each lesson. At your request, I can provide a complete list of ingredients for the class up front.

Learners will not need to use any apps or websites beyond the standard Outschool tools.

My name is Rochelle Van Der Merwe, but most people call me Chef Ro (it's just easier!). I graduated from The Art Institute with my culinary degree, and I have been in the food industry as a professional for nearly 15 years. I have been teaching for almost 10 years now, both to home cooks and to future professionals. I have taught at recreational schools, Culinary Schools, and most recently at a high school. 

I have cooked in both restaurants and catering companies. I have also been the Executive Chef of a hospital, run recreational cooking programs all over the country, and even done some private chef work. I have worked professionally on both the culinary side and the pastry side, and have taught both for many years. I simply love showing people that cooking is not difficult, and can also be quite fun!

I do have two four-legged colleagues of the kitty variety that will sometimes cry because they want to be on camera. But I assure you - I don't let the cat hair get in the food!
