Plant-Based Cooking Club for Kids: Healthy Muffins

In this one-time class, we will learn how to make plant-based muffins that are quick, healthy, and delicious.

Class Experience

This class will teach learners how to make delicious, healthy, plant-based muffins.  We will learn about how to put healthy ingredients together to make something wonderful.  Learners will prepare muffins alongside the teacher while watching live demonstration video.  Teacher will be able to also observe learners as they make their own muffins and interact with learners accordingly.  

Learners will need to have a set-up that allows them to cook in the kitchen and also be on the live Zoom class.  Some prefer to bring their laptops or tablets into the kitchen and set it up where they can see the class and also be seen by the class if desired.  You may also elect to simply join the class to watch and learn and then recreate the recipe at a later time if desired. 

Students will need to have the following list of supplies to be able to participate:

- 2-3 cups of flour of choice (recommended are whole wheat flour, oat flour, or spelt flour); gluten free flour is okay if needed, but not recommended because it tends to be gummy in texture
-1 cup maple syrup or coconut sugar
-1 very ripe banana or 1 cup apple sauce with no added ingredients
-1 tablespoon chia seeds
-1 teaspoon baking powder
-1/2 teaspoon sea salt 
-1-2 cups plant-based milk of your choice or water (recommended are coconut milk, almond milk, macadamia nut milk, or hemp milk)
-muffin tin of choice
-1 teaspoon oil or plant-based butter to grease muffin tin (recommend cold-pressed coconut oil, light olive oil, or Miyoko's plant-based butter)
-measuring cups and spoons
-mixing bowl
-large mixing spoon
-oven mitts to handle the pan (adults should do this part for safety)

Optional ingredients to customize your muffins:
-cacao nibs or plant-based chocolate chips
-dried cherries
-dried cranberries
-fresh or dried blueberries
-walnuts or pecans
-pumpkin pie spice
-cinnamon powder
-1 organic lemon or orange for zesting (you will need a zester for this option)
-hemp seeds
-chopped dates
-raisins
-chopped apples

Learners will need to use the oven to bake the muffins, so adult help and supervision is recommended, especially for younger children.
