No-Bake Desserts: Health Conscious, Gluten Free Edition

Due to a high volume of requests, I've created a gluten free edition of my No-Bake Dessert classes. Class will be held once a week and meets for 2 months. Each class, students will make 1 of 8 different delicious health conscious desserts!

Class Experience

In each edition of my No-Bake Dessert classes, not only will each learner walk away from class with a delicious dessert to share with their families; they also will learn kitchen and food handling safety, at the start of class. We will also learn about proper kitchen-hygiene skills. These will be fun, educational and delicious classes! The theme of this edition of the class is Gluten Free Desserts. Unlike some of my other No-Bake classes, this one features healthier recipes filled with super foods and other nutritious and gluten free ingredients. 

Each class I will make the desserts along side my students and during each live meeting I use the thumbs up rule to ensure that everyone is ready to move on before explaining the next step of the recipe. This ensures that students will not fall behind and become overwhelmed by the dessert steps! I always like to make sure that my students not only enjoy their desserts after class, but enjoy the time they spend in class as well.

The following is the list of the gluten free desserts we will make together each week:

Week 2: Caramel Apple Cheesecake Parfaits 
Week 3: Mixed Berry Tart
Week 4: Chocolate Peanut butter Pie (featured in class listing photo)
Week 5: Blueberry Cheesecake
Week 6: Salted Caramel Dark Chocolate Bars
Week 7: Strawberry Tiramisu Cheesecake Cups 
Week 8:Chocolate Almond Cream Tart

I will provide an ingredients list for the following weeks desserts in the classroom once your learner is enrolled. However week ones ingredient list will be provided to you now. You can find it in the supplies sections below.

Learning Goals

My learning goals for this class are for each student to walk away knowing how to take and read proper measurements, to read a recipe, and to have a detailed knowledge of the importance of kitchen hygiene. Things like properly washing our hands before cooking or to make sure our hair is pulled back and away from our table. Also to not sneeze or cough on our work area as well. Kitchen safety is another important topic of discussion in this class. I will go through the importance of wearing heat resistance gloves when taking something out of the microwave or from the stove top and the proper use of kitchen utensils. I will make each dessert in class with the students in order to show everyone how to do each step. On top of all of that, each student will get to walk away with the instructions on how to make their desserts again in the future.

Other Details

Parental Guidance
We may have to occasionally chop and or melt certain ingredients. During those times, parental supervision or help is recommended to ensure no burns or cuts occur. A few recipes will also call for reducing a few ingredients on a stove top and breaking a few ingredients down in a blender or food processor. When ever these tools are used, I always recommended parental guidance then as well.
Supply List
Ingredients and supplies list for the Strawberry Shortcake Treat Bars:

4 Tablespoons butter
10oz bag mini marshmallows
13.5oz box Vanilla Chex
1-1.5oz freeze-dried strawberries
9x13in baking dish
Non-stick Cooking Spray
Large Microwave Safe Bowl (For anyone who does not have or use microwaves, we can easily melt our butter and marshmallows on the stove as well. Instead of a large microwave safe bowl, you would need a pot large enough to fit in all 10oz of marshmallows and the butter.)
Rubber Spatula 
Mixing Spoon

Please note that I always start our first week with the simplest of the 8 recipes. Though this dessert will not need them, some of the future recipes will require that students have access to a stove top, blender, and/or food processor! Also, Measuring cups and spoons and whisks as well.

I have attended both Tops Cooking school and Tops Baking classes. I also have my food handlers and kitchen safety permit. Lastly, I have many years experience of making gluten free foods due to my family and my dog being gluten intolerant!
