In this eight-week FLEX class students will learn to make eight more adventurous breakfast foods from scratch. There are NO LIVE MEETINGS for this class to allow students maximum flexibility to participate each week. Student families purchase the supplies on their own each week, and prepare each dish using prerecorded detailed demonstrations. Students complete the assigned activities that provide opportunities to interact both with other students in class and with me, the teacher. Though we will not be in a live video together, I will not leave you to learn on your own. I will answer your questions, provide written or extra video recorded messages to help you, and check your progress as you post in our Outschool classroom. You will be engaging with your peers throughout the course (see below). Opportunities to interact with the teacher and other students include: *Posting and responding in the Outschool classroom ("I like" and I wonder" feedback, find someone else who... *Sharing written or video recorded reflections on what worked and what you would do differently *Answering questions posed in the videos, and/or answering questions posted by other students in the classroom message board, *Challenge "scavenger hunts" for other recipes that use our cooking techniques & ingredients, or scientific or historical facts By Monday each week I will: (1) post a prerecorded video that demonstrates each step for the week's dish, and (2) post the activities for that week (see below). I will check student posts, reflections and activities daily and respond throughout the week (within 24 hours). Week 1: Introduce yourself in the Outschool classroom chat with your name, country (or state) & your favorite breakfast, Watch the APPLE PIE BISCUITS demonstration video. Make biscuits! Post a picture of your beautiful creation on the Outschool classroom message board & complete a reflection on what worked and what did not work. Week 2: Check out your classmates posts and pictures from biscuit week & post one "I like" and one "I wonder question" about their post. Watch the CROISSANT BREAKFAST SANDWICH demonstration video. Prepare your breakfast sandwiches! Check out comments on your pictures. Post a picture of your scrumptious sandwiches and leave a message sharing your thoughts on croissants, or laminated pastries in general. (Like why are croissants French pastries when the French call then Viennese/Austrian pastries? Bonus challenge if you look up the answer to your own question or someone else's and tell us about it! Week 3: View your classmates pictures in the Outschool classroom message board, find someone who feels the same way you do about croissants and leave them a positive message. Watch the LEMON POPPYSEED MUFFINS demonstration video. Make some soft, dense poppyseed muffins. Compare and contrast your lemon poppyseed muffin texture with any other muffin you have had. Did you notice a difference in the texture from the melted butter? Challenge: what other baked goods use melted butter instead of room temperature or cold butter? Week 4: View classmates' muffin comparisons in the Outschool classroom chat and comment one relevant "I like..." and one "I wonder..." about another classmate's experience. Watch the demonstration video for LOADED BREAKFAST BAKED POTATOES. Prepare breakfast potatoes. Post a picture with the fillings you chose, why you chose them, and if you were happy with them. Week 5: Watch the demonstration video for BANANA PANCAKES. Prepare banana pancakes & post a picture of them, and share one banana-related memory you have. Reflect personally (no need to post or message unless you want feedback) on what went well and what you would do differently if you made them again. Bonus scavenger challenge: what ingredients are affected when we add (or substitute) with a fruit like banana or pumpkin that is both wet and bulky? Week 6: Read your classmates' banana memory messages, and comment on one with a positive relevant note. Watch the POACHED EGG BREAKFAST demonstration video. This video includes the poached eggs and a light breakfast salad with avocado toast option. Make some poached eggs. Post a picture of your best egg (or a picture from your poaching process) and let us know what you thought was the easiest part & what you thought was the hardest part of poaching eggs. Bonus challenge: find out how old your eggs are & tell us why this did or did not surprise you. Week 7: View classmates' experiences on what was easy and hard about poaching eggs in the Outschool classroom chat and comment with any other egg poaching experiences you may have had & how they were the same or different. Watch the demonstration video for HUMMINGBIRD BREAD (aka Dr. Bird Cake). Make an amazing bread. Post the best picture you can get of your frosting application, or a picture of your favorite bird, and share one thing you know about that has more than one name, or an interesting history for it's name. Bonus challenge: the history of Jamaican Jerk FlipGrid activity. Week 8: View everyone's frosting or bird pictures & remember how delicious your cake was! Watch the demonstration video for IRISH BOXTY (potato pancakes). Make some savory pancakes. Learn about the history of potatoes and the Irish Diaspora. Post a picture and a parting message for the class in the Outschool classroom. This course provides the learner with the opportunity to learn new skills, and to prepare new recipes to share with their family. Students will build their confidence in the kitchen through the preparation of delicious food in a supportive environment.

Students will finish this class with confidence from the experience of preparing eight classic breakfast recipes to share with their family.
Other Details
Parental Guidance
This is a cooking class that involves the use of knives, and a stovetop or oven. Parents must be present in case of accidents or emergencies, and available if their student needs assistance.
Students need not be experts, but should be familiar with knives. I will review knife safety in every class that uses knives, demonstrate each cut, and explain how the technique keeps us safe. At parent or student request I can provide an additional demonstration video if needed. Please make sure they have sharp knives and consider buying them their own chef's knife with a shorter blade meant for smaller hands. They should not use steak knives as a substitute.
It is your responsibility to review the ingredients each week and to let me know if there are any allergies or sensitivities you need help with so I can help you find an alternative. Families should purchase supplies ahead of time and students should be prepared to cook with me in the video. The lesson in the video is in real time. The only exception to this is long baking times.

A pfd file with the supply list for the first week will be available upon enrollment. Each week the supply list will be posted in the Outschool classroom no later than Monday for that week.

I am offering this class as an introductory class for older students to begin cooking classic meals from scratch. I have been cooking, baking and feeding people my whole life. My cooking focuses on foods that are whole, and natural as much as possible, but breakfast is a 'splurge' class for me!
This class involves a few dangerous activities. I will review safety and proper techniques every time we use: knives, a stovetop, or the oven. I use clear and visible demonstrations as well as explain why we are using the specific techniques (why it is safer).
