Class Experience

Each week students will learn how to cook easy, healthy, delicious meals!  We will be starting with healthy pumpkin chocolate chip muffins that are so easy and so delicious!!! Each class will have healthy recipes that any child can bake!  Let's have fun baking together! You can also sign up for the other classes I have offered and have listed below.  

During this class students will learn how to read a recipe and correctly measure out ingredients.  We will be using an oven for this class, so please be aware that the student may need help putting the muffins in to the oven and taking them out.  Please also see the ingredients and have the student come prepared with the needed items.  We will be measuring and mixing in class. The class will conclude when the muffins are placed in the oven and I have shown the student how to tell when the muffins are done.

February 15- We will be taking President's Day off
February 22- Easy no bake protein balls
March 1- Turkey lettuce wraps
March 8- Yogurt tarts


I can be flexible with my time, if your student would like to participate, but this date or time doesn't work.

Parental Guidance
For our first class on February 8th I will be using a Kitchen Aid mixer to mix the muffins, but a student can mix with a hand held mixer or even a large spoon, whatever works best for your student. Please make sure they are familiar with how to use both and know the safety precautions needed. Students will need to have knowledge with how to use an oven and oven safety- an adult may be needed to get muffins in and out of the oven. February 22nd class we will use a mixing bowl, measuring cups, cookie scoop, cookie sheet, and freezer. March 1st cooking class we will be using a knife to dice peppers, garlic, and ginger. You know your student best, if you would prefer to help them prior to the class dice peppers, that would be a good option and garlic powder and ginger can also be substituted for this recipe. We will also be using a pan and the stove top. March 8th class we will be making no bake yogurt tarts- a bowl, muffin tin, cooking spray, and a freezer are needed for this class. Alert: possible allergens - milk and eggs
Supply List
I have included February 8th recipe here and needed supplies.  Please look at attachments for the other class recipes and needed supplies.  

Items needed - a Kitchen Aid mixer, mixing bowl and hand mixer, or mixing bowl and large spoon.  Muffin pan, a cooking spray or muffin liners, measuring cups, measuring spoons, and a hot pad.

Ingredients:
1/2 cup unsweetened apple sauce
1/4 cup honey
1 cup pure pumpkin puree
1/2 cup plain nonfat Greek yogurt
1/4 cup milk (your choice- dairy, almond, soy)
1 egg or egg substitute
1 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp salt
1 TBSL pumpkin pie spice
1 1/2 cups flour (white, wheat, or a combination of both)
1/2 cup mini dark chocolate chips
2 scoops unflavored collagen peptides (optional)

Directions

Preheat oven to 400 degrees F.  In a large mixing bowl, whisk together applesauce, honey, pumpkin, Greek yogurt, milk, egg, and vanilla.  Mix in baking soda, baking powder, salt and pumpkin pie spice until well combined.  Mix in flour and collagen peptides.  
Either spray 12 muffin tins or use muffin liners.  Bake for 15-17 minutes or until golden brown on top and center is set.

I love cooking with my three children at home.  I also love exploring how to make recipes healthy, delicious, and kid friendly.  My son and I have been teaching a neighborhood cooking class to students ages 4-12 for over a year with over 15 students in attendance each time.
