In this 4-week course students will learn about gluten and prepare 4 gluten free recipes.

What's included

Class Experience

Gluten-free baking can be challenging. Trying to navigate the various substitutions, the different flours, starches, and binding agents can be complicated. I want to make it simple, to show anyone they can bake amazing things. 

Each week students will watch four to six videos. They will participate in classroom games, respond to discussion posts, do the weeks baking challenge, and have optional activities. 

Week 1:
What is gluten?
    * Students will learn what gluten is and what it does in baking through a video presentation. 
    * Basic measuring and kitchen safety instructional video.
    * Every Wednesday, there will be a discussion post for students to respond to by the following Friday at midnight. 
    * They will participate in a video exchange game. Where I will post a topic video, and each student will need to respond with a       
     video answer.
    * Students will watch a preparation video "Mise en Place" showing them the supplies and ingredients they will need to bake
     cookies. 
    * Students will prepare cookies with a demonstration video to guide them along the way and share a video of their cookies.

Week 2:
    * Students will learn how to identify gluten on an ingredients list through a video and lecture post.
    * Every Wednesday, there will be a discussion post for students to respond to by the following Friday at midnight. 
    * I have who has video exchange game. I will assign each student an alternative name for gluten at the beginning of the week. On 
      Monday afternoon, I will post a video with a message "I have..." and ask, "Who has...?" The student that has the name I call out will then say, "I have..." "Who has...?" picking another name for gluten off the list provided until the whole class has gone. 
    * Students will watch a preparation video "Mise en Place" showing them the supplies and ingredients they will need to bake
     brownies. 
    * Students will prepare brownies with a demonstration video to guide them along the way and share a video of their finished 
      brownies.

Week 3:
    * Students will learn about gluten-free flour mixes and how to prepare their own through a video created by myself.  
    * Every Wednesday, there will be a discussion post for students to respond to by the following Friday at midnight. 
    * They will participate in a video exchange game. Where I will post a topic video, and each student will need to respond with a       
     video answer.
    * Students will watch a preparation video "Mise en Place" showing them the supplies and ingredients they will need to bake
     French bread. 
    * Students will prepare French bread with a demonstration video to guide them along the way and share a video of their finished
      French bread.

Week 4:
    * Students will learn how to experiment with complementary flavors and learn how to incorporate them in a recipe, through a 
      video and lecture post. 
    * Every Wednesday, there will be a discussion post for students to respond to by the following Friday at midnight. 
    * They will participate in a video exchange game. Where I will post a topic video, and each student will need to respond with a       
     video answer.
    * Students will watch a preparation video "Mise en Place" showing them the supplies and ingredients they will need to bake
     personalized cupcakes. 
    * Students will prepare personalized cupcakes with a demonstration video to guide them along the way and share a video of their 
      finished cupcakes.
Learning Goals
Upon course completion, students will be understand what gluten is and how to identify it on food labels. Students will become familiar and comfortable with following recipes, measuring ingredients, basic kitchen safety, and preparing gluten free baked goods. Students will have increased confidence in their ability to bake and create their own unique recipes.

Parental Guidance
If your child is unfamiliar using the oven please assist them as needed. We will learn the rest.
