In this one time course learners will be led through the process making dragon's beard candy and the science of how we can pull sugar crystals as fine as cotton candy.

US Grade 5 - 8
Learning goals for this class include basic food chemistry, basic food material science, and how to make dragon's beard candy. The class starts with a quick safety briefing following by cooking the sugar syrup. After pouring the syrup into molds to cool we will discuss the scientific concepts behind this popular desert. After sufficient cooling time the class will be lead, as a group, in how to create the hair-thin strands. 
Concepts we will cover in this class:
- The properties of sugar
- What we know about carmelization
- A closer look at how acids affect sugar

Parental Guidance
As in all candy classes, we will be working with hot sugar in the pot so parental supervision is required.
Supply List
2 cups sugar
1/4 cup light corn syrup (you can substitute with honey)
1 teaspoon vinegar
1 cup water
3 drops food coloring
3 cups corn starch
1 medium pot
Silicone hot chocolate bomb or donut mold (contact me if you need a substitute the mold)
A spoon (I prefer silicone spatula)
Candy gloves (optional) (you can substitute with cheap knit gloves and either nitrile or vinyl gloves)
Peanuts or other filling (optional)

Hello! am a scientist and adventurer. I have a Masters degree in Animal Science with minors in Chemistry and Fish & Wildlife. I started my journey investigating sheep and goats, went on to study shrimp and zooplankton, and have many years of experience teaching STEM to students from preschool up to college.
The classes that I am currently teaching cover Food Science, Animal Science, Ichthyology, STEM experiments, and Women in STEM.
