Class Experience

In this one-time class, students will learn the wonderful skill of making fresh strawberry jam preserves. Once you have learned the process, you can make almost any type of jam or jelly using the same techniques. Homemade jam is a wonderful alternative to store-bought jams and jellies. You might never want to eat jam from the grocery store again! 
It also makes a wonderful gift for teachers, friends, hosts, and relatives!

Class Instruction will include:

- demonstration and discussion of preparing fruit for cooking
- demonstration of preparing waterbath and canning equipment
- demonstration of cooking fruit on stovetop
- modeling of filling canning jars and assembling lids
- demonstration of processing jars of jam in waterbath
- modeling of proper oven stovetop usage and safety

I will model the process of preparing the fruit and cooking the jam in my kitchen as the student follows along while making their own. I like to keep the class size low so that learners have the opportunity to ask questions as we go and be as interactive as possible. As I teach, I strive to explain why we do things a certain way or use certain ingredients, rather than just showing the process. Students will need extra time after class to finish processing their remaining jars of jam. Once the jam is processed in the waterbath it can be stored on a shelf for up to 1 year, though I doubt it will last that long before it gets eaten!

Limited parental supervision is required for this class since we will be using the stove and handling very hot glass dishes, pans and boiling water.
Everything that you will need for this class is included in the materials section below. It is imperative that students have the correct equipment for this class in order for their jam to turn out properly and to prevent injury.

Parental Guidance
Limited parental supervision is required during the cooking and waterbath canning process. We will be using the stove and handling very hot glass dishes, pans and boiling water. It is imperative that students have the correct equipment for this class not only to ensure that their jam to turns out properly but also to prevent injury. Supply List
•	5 cups Strawberries, crushed
•	¼ cup lemon juice
•	6 tablespoons Ball Classic Pectin- $3-$4 at Walmart or grocery store
•	7 cups sugar	

Required Equipment: It is necessary that all students have the required equipment for this class in order for their jam to set and store properly.
8-  8-ounce glass canning jars with sealing lids and bands (see listing picture)- $12 at Walmart for a complete set

wide-mouth funnel
wide tongs
heat-proof rubber spatula or large plastic spoon
measuring cups
measuring spoons
potato masher or large fork
one large 8-quart stockpot
one extra-large stockpot, 8 quarts or more, deep enough to 4 hold jars and cover them completely with water OR an Instant Pot
oven mitts or other heatproof hand protection
 1 file available upon enrollment

I have been baking for over 30 years and specialize in creating delicious pies, breads, cookies, and jams. I have been making jams for the past 10 years. Unfortunately, my family will no longer eat store-bought jam so I stay busy keeping our supply going throughout the year!

I am a graduate of the University of California at San Diego with a degree in Political Science. My teaching experience includes homeschooling my own two children for 18 years. I have also taught ESL online for the past 1 1/2 years.
Fun fact about me: I began baking on my own as a latch-key kid in the 80's. Many of my first attempts were completely inedible!
