1 hour per week. Your homework is to let your pasta rest, and to eat your amazing Italian creations!Class Experience
In this four-week FLEX class students will learn to make two fresh sauces, and two forms of fresh pasta from scratch. There are no live meetings for this class to allow students maximum flexibility to participate each week. Opportunities to interact with the teacher and other students include posting and responding in the Outschool classroom, sharing a written or video recorded reflection on what worked and what you would do differently, answering questions posed in the videos, and/or answering questions posted by other students in the classroom message board. By Monday each week I will post a prerecorded video that demonstrates each step for the assigned task as well as post the activities for that week (see below). I will check student posts and respond throughout the week. Students watch the demonstration video for the week's topic and prepare the food for the week. Students complete the assigned activities that provide opportunities to interact both with other students in class and with me, the teacher. Though we will not be in a live video together, I will not leave you to learn on your own. I will answer your questions, provide written or recorded messages to help you, and check your progress as you post in our Outschool classroom. You will be engaging with your peers throughout the course (see below). Week 1: Introduce yourself in the Outschool classroom chat, Watch the fettuccini demonstration video. Prepare dough, roll out and cut fettuccini noodles. Send me a picture of your beautiful noodles & complete a reflection. Week 2: View classmates fettuccini in a virtual gallery walk (google slides) and comment one "I like" and one "I wonder" about classmate's pasta. Watch veggie farfalle (bowtie) demonstration video. Prepare dough, roll out, cut and shape veggie bowties. Compare and contrast your two pasta making experiences with a picture or two, or a short video & continue your reflection. Week 3: Participate in our pasta shape FlipGrid. Watch demonstration video for pesto sauce. Prepare fresh pesto sauce by hand. Post a picture and a one word description of how pesto tastes. Continue your reflection. Week 4: Find someone who had a similar comment to pesto as your own & leave them an encouraging message. Find someone who had a different pesto description from you and leave them an encouraging message. Watch the marinara demonstration video. Prepare homemade marinara sauce from scratch. Post a picture of your sauce and a parting message for the class. This course provides the learner with the opportunity to learn new skills, and to prepare new recipes to share with their family. Students will build their confidence in the kitchen through the preparation of delicious healthy food in a supportive environment.
Learning Goals
Students will finish this class with confidence from the experience of creating four classic Italian-American recipes by hand that can be mixed and matched at home.

Parental Guidance
This is a cooking course that involves the use of knives, an oven, and a stovetop. Because of the dangers involved parents must be present while their students are preparing food in case of accidents. Please see the ingredient list for each class for any allergies.
Supply List
Ingredients: A list with specific amounts of ingredients for the first class will be provided to all learners upon enrollment. Equipment: Students will need a pasta machine. I use a hand crank Norpro model that was about $30 on sale. A quick online search shows many options from $25-$80. Target currently has one listed for $25, Amazon has many choices as well. It is a small investment, but once you taste homemade pasta you will agree that the cost is worth it. (Especially when your child is doing the work!). *I can send an extra video by request for students to use a rolling pin and knife if a pasta machine is not available, but fair warning the pasta is not as nice.

I am offering this class as a healthy introductory class for older students to begin cooking classic meals from scratch. I have been cooking, baking and feeding people my whole life. After having a heart transplant several years ago, I have committed to studying nutrition. My cooking focuses on foods that are whole, natural, and heart healthy for my family.
