In this one-time, 120 minute class, learners will learn how to make a Coconut Cloud Cake.. We'll learn how to both make a simple coconut cake, a simple coconut filling, and a 7-Minute frosting for the cake. I will make sure learners have a copy of the recipe before class meets. My class will be very structured, in that we will follow the Coconut Cloud Cake recipe in the recipe's steps, as they are listed. I will begin class by teaching learners the correct precautions to take while handling food items, i.e. washing hands, making sure loose clothing is secured, making sure hair is pulled back out of the way, and making sure learners are prepared to learn how to make the Coconut Cloud Cake. My teaching style in cooking classes is to demonstrate each step of the recipe, and make sure students are following along. I will field any questions from students as the class progresses. We will discuss the recipe itself, the recipe steps, and the finished product. Learners do not need to have any prior cooking experience to take this class. However, each student should know how to turn on both the stovetop and oven in their respective home kitchens, and know how to use an electric hand mixer. Learners should have all of the utensils, equipment, and ingredients set out and ready to use 10 minutes before class begins. Learners should read the recipe before class begins, as well.
Learning Goals
In this class, students will learn how to make a homemade Coconut Cloud Cake, coconut filling, and homemade 7-Minute frosting. Students will begin this class by learning proper kitchen safety measures. Students will first learn how to make the Coconut Cloud Cake batter, and then they will learn how to make 7-Minute frosting. Finally, students will learn how to properly bake the Coconut Cloud cake, how to make a simple coconut filling, and 7-Minute frosting for the cake.

Parental Guidance
A parent should be present in the home as their Learner participates in my Coconut Cake class, as Learners will be utilizing small kitchen appliances, the stovetop, and oven.

Learners will need the following kitchen utensils, equipment, and ingredients for the Coconut Cloud Cake class: UTENSILS, AND KITCHEN EQUIPMENT NEEDED: Oven Stand mixer Hand-held mixer with beaters Stand-mixer bowl or large mixing bowl Liquid measuring cups Dry measuring cups 2 small bowls to use while cracking eggs Whisk Double boiler or a large glass bowl that will fit over a pot Pot to hold large glass bowl if not using a double boiler Measuring spoons Rubber Scraper Non-stick baking spray or vegetable oil Pastry brush Parchment paper Large (2 oz.) cookie scoop or large ice cream scoop with trigger Three 9-inch, round cake pans Cooling rack Can opener Spoons Sifter Table knife Potholders Cake plate or dinner plate Disposable pastry bag or large, plastic zip-top food storage bag Kitchen scissors INGREDIENTS FOR THE CAKE: 3 tablespoons flour for flouring cake pans 1 cup unsalted butter, softened at room temperature 2 cups granulated sugar 4 large eggs 3 cups sifted, all-purpose flour 2 teaspoons baking powder 1 teaspoon baking soda ¼ teaspoon salt 1 cup whole milk 4 tablespoons white vinegar 1 teaspoon vanilla extract 1 teaspoon coconut extract INGREDIENTS FOR THE FILLING: ¾ cup granulated sugar 1 cup sour cream 4 tablespoons coconut cream (usually found in the International foods section of grocery store.) OR 4 tablespoons whole milk ½ cup flaked, sweetened coconut INGREDIENTS FOR THE 7-MINUTE FROSTING: 1 ½ cups granulated sugar ¼ teaspoon cream of tartar 1/8 teaspoon salt 1/3 cup water 2 egg whites ½ teaspoon vanilla extract 1 teaspoon coconut extract 10 oz. sweetened, flaked coconut

I'm a highly-skilled home cook. I've been cooking for over 35 years. I began learning how to cook at an early age with my mother, grandmother, and aunts. I've made homemade Coconut Cloud Cake many times, and can teach your learner how to do so safely.
I have 14 years of experience teaching teenagers, as I am a former teacher of both Spanish I and English. As such, I am experienced at guiding teenage students through lessons.
