Intermediate - Advanced Level
Learn how to make a delicious, festive Buche de Noel chocolate cake! This classic French dessert is the perfect addition to your holiday table! The first day of class we will bake the cake, make sugared cranberry decorations, and roll the cake in a towel which then has to cool overnight. The second day we will make the chocolate filling, chocolate ganache, and assemble and decorate the cake. Class Instruction will include: Day One: - demonstration and discussion of mixing tools and techniques - demonstration of mixing cake batter and preparing for baking - demonstration of making sugared cranberries - demonstration of rolling cake for cooling Day Two: - demonstration of making chocolate filling - demonstration of making chocolate ganache - demonstration of assembling and decorating buche de noel I will model all steps of making the cake in my own kitchen as the student follows along while making their own delicious creation. This class is highly interactive and I encourage learners to ask questions along the way. All students must have an electric mixer to use for class in order for the recipe to turn out correctly. Limited parental supervision is required for this class since we will be using the oven, electric mixer, stove, and handling sharp cutting utensils.

I have been baking for over 30 years and specialize in creating delicious pies, breads, and cookies. I have provided professional-grade desserts, pies and cake pops for many birthdays, graduations, baby/wedding showers, and community celebrations.
I am a graduate of the University of California at San Diego with a degree in Political Science. My teaching experience includes homeschooling my own two children for 18 years. I also have been teaching online for the past 5 years.
Fun fact about me: I began baking on my own as a latch-key kid in the 80's. Many of my first attempts were completely inedible!
Now, after many years of experience and perfecting my craft, I'm excited to share my passion for baking with young learners!
