Why is a flex format positively awesome for baking and cake decorating? #1 For best results, learners truly need to work with ingredients in an ideal state. In live classes a lot of time is spent “keeping the group together.” Oftentimes this means learners are working with fondant that has dried out of ganache that has cooled because they aren’t able to work at the best pace for them. #2 Creative minds typically don’t like to be rushed. I doubt Van Gogh ever said, “I’ve got 55 minutes. Let’s knock out some sunflowers!” I can see precision, detail, and creativity in the work my learners complete because they have the time to really immerse themselves and work at a pace that is comfortable for them. #3 The ability to pause and rewind is like being the gift of time travel! Class participants can manage the pace of the class themselves and customize it 100% to their learning style. #4 As a working mom of three homeschooled kids, I completely understand how busy life can be sometimes. This class is available whenever you are! Rainy day and soccer is cancelled? Make your cake! School holiday? Make your cake! Flexibility is a gift in our busy lives! ************************************** This class suits beginner to advanced bakers and will be equally fun for all! We will be working with iconic flavors of the Christmas season in new and exciting ways. Participants will be led step-by-step through the process to create the following desserts: Week One: Mini Eggnog Cheesecakes Week Two: Hot Chocolate Lasagna Week Three: Gingerbread Cupcakes Week Four: Chocolate Peppermint Layer Cake Expect a good dose of holiday cheer in this class as well. From décor to background music this class will include all the holiday feels! Each week I'll be sharing a special ornament from our tree with a short story behind it. Learners are encouraged to do the same and share theirs in the classroom. We'll bring the spirit of Christmas into our virtual classroom space in so many fun and unique ways. Each week a series of videos will be shared that break down all necessary steps in great detail. This is a flex class and does not meet live. Content will be delivered each week and bakers can work along with the videos at a time that is convenient for them. I am 100% available for support and answer all questions the same day they are received. Learners will to share photos of their work for feedback in the Outschool classroom. Our virtual classroom space will come alive as learners brainstorm, ask questions, and cheer on one another's successes. Each week will involve interactive riddles or jokes for participants to get into the holiday spirit! Learners who have taken other classes with me can expect to pick up a few new skills in this class. We'll be making cream cheese buttercream, piping with multiple colors at once, and filling our layer cake in a unique way to name a few! Recipe cards for all four weeks will be sent at the conclusion of class so these delicious recipes can be repeated year after year. Trust me, you'll be getting requests for more! When it comes to cake decorating…. I pretty much do it all! I can take learners from their very first box mix all the way up to stacking tiers upon tiers of fondant covered edible works of art! I offer a “skills map” towards the end of each class to help learners identify what skills they may want to jump into next. Egg Nog Cheesecakes
We'll prepare a crust and filling for a seasonally-inspired egg nog cheesecake.
Lesson 2:
Hot Cocoa Lasagna
This week is all about preparing our scrumptious layers and bringing them together in a sweet lasagna-inspired dessert.
Lesson 3:
Gingerbread Cupcakes
We'll bake, fill, and top delicious cupcakes inspired by one of the season's most famous cookies... gingerbread.
Lesson 4:
Peppermint Cake
In our grand finale, we'll bake and decorate a chocolate cake with amazing peppermint buttercream and garnish.
Other Details
Parental Guidance
Learners will be using the oven, electric mixer, food processor and other kitchen implements. I trust your judgement when it comes to the level of supervision your learner requires. Learners are reminded throughout the videos to seek adult assistance if they feel uncomfortable or would like additional support at any time.
Supply List
A very detailed supply and ingredient list will be available in the classroom upon enrollment. I provide a supply list that offers the level of detail I, as a parent, want when my children embark on a learning adventure. Below you will find a general list of ingredients we'll be using. Please contact me with any allergy concerns to see if substitutions are available. Graham crackers, butter, cream cheese, sugar (granulated and confectioners), eggnog, flour. eggs, vanilla extract, nutmeg, whipped cream, Oreos, hot cocoa mix, heavy whipping cream, pudding mix, milk, marshmallows, Nutella, spice cake mix, molasses, oil, orange marmalade, chocolate cake mix, peppermint extract, candy canes, PAM spray. Cupcake tins/liners, cake pans, piping bags and tips.

I am a professional baker who has been teaching confectionery arts on Outschool for three years now. I have loved baking since I was the age of most of my learners! In fact, in class you’ll see my beloved KitchenAid stand mixer that was my 12th birthday present and is still a total workhorse to this day!
When my kids were young I decided to take some cake decorating classes to ensure my kids always had show-stopping cakes at their parties. Over time it blossomed into a career beyond my wildest dreams. I operated a bakery for a number of years and eventually transitioned into this ultra-fulfilling role as a confectionery arts teacher.
I love seeing the creativity, patience, and precision that goes into each learner’s work. However, I also love seeing them manage a project from start to finish. I am proud of them when they are faced with a setback in their project and they calmly make a plan B. I enjoy watching them interact in the virtual classroom as they learn from one another and provide feedback/compliments on the work of their peers. There is so much more to cake decorating than just cake. (((Although as an invested parent it is your responsibility to partake in eating their delicious homework – haha!))) These learners grow in so many ways throughout class and it is a blessing to participate in that process.
