Sign up for our live, intermediate, one-time class that teaches your baker how to make choux pastry, eclairs, and creme patisserie. Our expert pastry chefs will guide them through the process in a two-hour workshop with overhead views of the action. They will learn techniques to create delicious pastries like French Cream Puffs, Eclairs, or Paris Brest. The class is designed for groups of four participants, with additional chefs available for larger classes. Recipes, ingredient lists, and equipment requirements will be provided in advance. The class is interactive, and our chefs will be available for questions and feedback. Join us for this high-quality learning experience! Learning Goals
We will be learning how to make choux paste, pipe it into different shapes, bake, and fill them!

Learners will be using kitchen tools and the hot oven. Please be prepared to assist your learner as only YOU know their true abilities.

Recipe(s) Provided Before Class: -- REQUIRED INGREDIENTS +++ Water All-purpose or bread flour Butter Salt Milk Eggs Cornstarch Sugar Heavy cream Dark chocolate Vanilla REQUIRED EQUIPMENT +++ Saucepan Spoons Silicone spatulas Baking sheets Parchment paper or Silpats Piping bag Large French Star tip (Open Star) or a 1M round. The size of the tip will dictate the size of your pastry! Whisk Stand mixer with the paddle attachment (Hand mixer CAN work - not as efficiently) Large pitcher or wide-mouthed, tall cup Kitchen scale with gram measures Microwave (optional, but helpful!)
