In this class, we will be exploring the rich cultural heritage of Mexico through its delicious foods and traditions. We will learn about different Mexican dishes and their cultural significance, identify the main nutrients found in these dishes, and make connections between food and culture. We will also be learning basic cooking skills and techniques and preparing healthy Mexican dishes.

+ Introduce the concept of Cinco de Mayo and its cultural significance
+Students will receive fun activities like coloring pages, word search and a reading passage.

Mexican Foods and Their Nutrients
* Topic: Analyzing the nutrient content of Mexican dishes
+ Students will understand the importance of nutrient balance in a meal
+ Students will make healthier choices when it comes to Mexican foods
+students will prepare a 3 course Mexican meal of their choice and submit photos to the classroom
課 3:
Preparing Healthy Mexican Dishes
Topic: Cooking and preparing healthy Mexican dishes
* Objectives:
+ Students will learn basic cooking skills and techniques
+ Students will prepare healthy Mexican dishes
+ Students will understand the importance of food preparation and food safety
+ Recipes of healthy Mexican dishes to make (tacos, guacamole, quesadillas etc)

Cultural Connections and Food Traditions
* Topic: The cultural significance of food and traditions in Mexican cuisine
+ Students will understand the cultural significance of food and traditions in Mexican cuisine
+ Students will make connections between food and cultural traditions
students will research and present on different Mexican traditions and holidays (e.g. Day of the Dead, Virgin of Guadalupe)
+Discuss the role of food in these traditions and how it brings people together

Erin Madden has a degree in dietetics and has developed a comprehensive understanding of the cultural significance of food and traditions in Mexico. Through her coursework on cultural perspectives, she has gained a deep appreciation for the complex relationships between food, culture, and identity.
Erin has taught several courses on Mexican cuisine and cultural traditions, including a university-level course on the cultural significance of food in Mexico. In this course, students explored the history and significance of Cinco de Mayo, as well as the cultural significance of food and traditions in Mexico. Students were required to prepare and present Mexican dishes, including those from the book "Cinco de Mayo: A Celebration of Food and Culture" by Diana Alarcón and Barbara S. Parker.
