This course is designed to take students on a culinary journey, teaching them key baking skills they will need. We will start with more simple bakes, such as brownies and peanut butter cookies, and progress through souffles, cheesecakes, and the challenging but delicious baklava and macarons! We will explore both savory and sweet baked goods, and students will come away with a knowledge of various kitchen tools and techniques, food safety tips, and an arsenal of recipes. We will also discuss customizations (including for allergies and preferences) and create various accompaniments to go with our creations, such as a dip for soft pretzels. Each week, there will be one or two videos for students to watch, along with recipes. If there are recipes students can't create due to dietary restrictions, missing tools, or missing ingredients, please let me know and I can provide a substitution! Each week, students will be asked to submit a picture of their final product. I will turn these photos into a collage so students can vote on their favorite presentation! Week 1: Video 1: Basic food and kitchen safety Video 2: 3 ingredient peanut butter cookies Assignment: Food safety quiz Optional project: Food safety video--post in the classroom! Week 2: Video 1: Cheese biscuits Video 2: Cinnamon Rolls with Cream Cheese Frosting (using the same dough as the biscuits!--making savory and sweet from the same recipe!) Project: Post a picture of someone in your family enjoying your food! Week 3: Video 1: Cupcakes Video 2: Buttercream frosting, decorating cupcakes Project: Decorate a cupcake for each member of your family. Post in the classroom. Week 4: Video 1: Banana Bread Video 2: Fudge Project: Classroom poll--vote on your favorite recipe so far! Week 5: Video 1: Oreo Truffles Video 2: Apple Crisp Week 6: Video 1: Monkey Bread (a delicious breakfast your whole family can enjoy!) Video 2: Soft pretzels--students will create a recipe for a dip or sauce to go with their recipes Project: Share your recipe for your pretzel dip! Try and make someone else's recipe and comment, letting them know what you think! Week of 7: (Starting Yeast breads!) Video 1: Cheese and herbs bread sticks Video 2: Pizza crusts Project: Vote in the classroom for the best pizza toppings! Week 8: Video 1: Yeast bread Video 2: Cheesy garlic rolls Project: Answer the question in the classroom--"What's the hardest part about baking bread?". Week 9: Video 1: Snickerdoodles (cookies) Video 2: Reese Peanut Butter "cake" Week 10: Video 1: Apple Pie Video 2: Lemon Meringue Pie Week 11: Video 1: Baking a 2-tier cake Video 2: Decorating a 2-tier cake (ganache and whipped-cream cream cheese frosting) Project: Decorate a cake to represent yourself! Post in the classroom, describing how this cake represents you. Week 12: Video 1: Cake Pops Video 2: Chocolate truffles Project: Design and create a cake pop for a themed party (kids birthday, baby shower, bridal shower, etc.). Post them in the classroom and see if your classmates can guess the theme. Week 13: Video 1: Angel Food Cake Video 2: Whipped Cream and Strawberry sauce Project: Combine your angel food cake, whipped cream, and strawberry sauce for a delicious Strawberry shortcake! (Optional: this whipped cream and strawberry sauce is also delicious on the biscuits we made earlier!) Week 14: Video 1: Savory Scones Video 2: Chocolate Souffle Project: Create a unique filling/topping for your scones. Share your recipe in the classroom. Week 15: Video 1: Merengues Video 2: Crackers Project: Create a delicious dip to accompany your crackers. Share your recipe in the classroom! Week 16: Video 1: Cheescake--crust and filling Week 17: Video 1: Creme Brulee Project: Share your work in the classroom! Comment on someone else's picture! Week 18: Video 1: Baklava Project: Google other types of fillings for baklava. Share a link to the one you want to try next! Week 19: Video 1: Macarons Video 2: Macaron filling Project: Create a unique macaron filling. Remember that you need to consider the flavor of both the macaron and the filling--what will complement each other the best? Share your creation in the classroom! Optional videos: brownies, banana coconut cake Content will remain available for an additional week for students who want a second look at something!

Dear parents and guardians,
You will be eating a lot of baked goods! Please enjoy!
Many baked goods have common allergens, including wheat, dairy, and soy. If you have food allergies, please let me know so I can recommend some substitutions. I always bake dairy free, and have done gluten free as well, so I know many substitutions you can use!
Students will be using various kitchen tools, including knives, the stove and oven, and other tools. At parents discretion, students may need supervision.

Students will be given a recipe (including instructions, materials needed, and tools needed) two weeks in advance, which should allow enough time to get groceries if needed. Each week, students will need an oven, measuring cups and spoons, a bowl, and a spoon for mixing. Students will also regularly need a mixer (hand-held or stand), various pans (bundt, cupcake, cookie, cake pans, etc.) As always, if there is something you do not have, please let me know and I will offer a substitution.
