Tarea
1 hora por semana. There will be one short assessment per week that covers the slideshows and readings; each is 10 questions or less. There will also be 2 small projects assigned. The learner will need to do independent research online, and I anticipate homework taking 1-2 hours a week.
Evaluación
I will correct assessment answers, but will not give letter grades. All assessments are 10 questions or less. I will read the projects and assignments, and provide feedback when warranted.

Nivel Beginner
This class requires no prior knowledge of food safety and food poisoning.  There are no live meetings for this class.  Videos will be slideshows with voiceovers posted as unlisted Youtube links.   Slideshows, assessments, and assignment instructions will be pre-posted.  The lengths of slideshows vary per week, but overall, the slideshows are each only a few minutes long.  For each type of poisoning, we will discuss the definitions/name origins, cause/toxin or reaction, symptoms, hospital treatments, prevention, epidemiology, history, mortality, and more.  

Assessments will be uploaded to the classroom, but learners will turn in answers to the teacher.  Any assigned articles from the internet will be uploaded as PDF webpages in the classroom.  Food safety will be covered as a reading and assignment during the first lesson.  

I check messages several times throughout the day on weekdays.  I will respond within 24 hours those days; please allow until the end of the following business day for responses on weekends, although I may respond on some weekend days as well.

Students will learn the basics of food safety and develop an introductory understanding of the 4 types of fish poisoning that we will cover.  By the end of the course, learners should be able to tell someone who has no knowledge of these poisonings/toxins the basics as they pertain to fish ingestion.

This course does cover food poisonings, some of which may be serious. Projects will need internet research to complete (they will need to research food safety and find case studies to report on); make sure your learner has knowledge of internet safety.

Assessments, instructions, articles and paragraphs will be uploaded directly to the classroom.  Learners will not need to print them unless that makes it easier for them.  Assessments can be turned in as answers (instead of filling in the Word documents).

While completing my MPH, I spent a great deal of time creating content on food safety, food poisoning and obscure diseases.  My undergraduate studies in biology gave me a firm foundation in microbiology and the chemistry involved in food spoilage.
