In this one-time science class, students will learn about Celiac Disease. The class will begin with a scientific explanation of Celiac Disease, and an explanation of the gluten-free diet that must be followed to control the disease. We will discuss the interesting history of the disease, and gain an understanding of why diagnosis rates have increased over history. We will finish off with some thoughts on psychology, looking at research on how Celiac Disease affects individuals psychologically and how one can support a friend or family member with Celiac Disease. This course would be of interest to learners who have Celiac Disease, or who wish to support a friend with it. It would also be interesting to learners with an interest in biology or medicine. No health or medical advice will be given in this class. All information will be scientifically accurate, and learners are encouraged to seek out their own medical providers for health and medical guidance.
