In this specific class, we will be making Pecan Pie Cookies. We're offering this particular cookie class at two different dates and times to fit your busy schedule. Students will follow along as we guide them through the cookie-baking process step-by-step, from mixing the dough to shaping, baking, and decorating. While the cookies bake, we’ll share history, fun facts, and vegan baking tips. We will occasionally be using oven, stove top, microwave, electric appliances (such as mixers or hand-held beaters), scissors, and knives during class. Parental supervision may be required depending on students skill and experience. Allergen Information: Wheat, nuts (pecans).

INGREDIENTS: [All ingredients are vegan alternatives] ½ C. + 3 TBS. butter ¼ C. + 2 TBS. brown sugar ½ c. + 1-2 TBS. sugar 1 TBS. cornstarch ½ C. chopped Pecans (raw/unsalted) 2 TBS. maple syrup 1 TBS. ground flaxseed 2 tsp. vanilla extract or paste 1 ½ c. + 3 TBS. Flour 1 tsp. cinnamon or pumpkin pie spice ½ tsp. baking powder ¼ tsp. salt MATERIALS/EQUIPMENT: Sauce pan Cooking spoon safe to use in sauce pan Small bowls (3) Mixing bowl Hand or stand mixer w/ bowl or food processor (if using hand mixer, set butter out 15 minutes before class) Measuring cups and spoons Spatula Cookie sheet Parchment paper Pancake flipper/baking spatula Plastic wrap Ice cream scooper (optional) Cooling rack Oven mitts Timer Knife or chopper for chopping nuts (if not already chopped)
