Class Experience

Healthy, conscientious eating is fun, creative and delicious. One of my favorite things about eating vegetarian or vegan meals is the creativity involved in making it as flavorful as possible. To that end, students in this course will meet once each week to learn new dishes and recipes for a healthy, plant-based diet. All recipes will be vegan (or vegetarian with vegan substitution options) and feature clear demonstrations and instructions for each dish. I'll update the recipes for each week based on student interest and feedback and provide follow up guides, ideas, and variations for each lesson. If students want to bake/cook along during the class, I'll provide ingredient lists at least a week in advance. Here's a sample of some of the things students will learn to make.

Week One: Desserts
Cookies, muffins, and other delights

Week Two: Light fare (snacks, pastas, or pizzas)
Whip up a variety of hearty and vegan-friendly foods for all occasions

Week Three: Soups & salads 
Light, but filling meals for lunch or dinner

Week Four: Main Courses
Hearty, filling meals that make going vegan taste as good as it feels

Learning Goals

Students will learn simple substitutions for vegan cooking and baking and leave the course with a collection of tested recipes they can add to their repertoire.

Teacher expertise and credentials
I'm a lifelong lover of language and stories who teaches literature and composition, specifically English (British) literature, including Shakespeare, seasoned by experiences in theatre and travel. I love words and stories to such an extent that I earned a Bachelor's degree in English and a teaching license from Campbell University in North Carolina and Master's degree in English Literature from North Carolina State University. Since then, I've taught college and high school courses, spent time in the theatre as an actor and director (including Shakespeare and some of my own scripts), and explored the real worlds behind the books I love. (My profile picture is from Hobbiton in New Zealand, which is astoundingly perfect beyond imagination). 
While it would be easy to read and travel and enjoy all the things I love, I feel compelled to share them with others through teaching, as well as through acting and writing. I owe part of my passion for all of the above to those who taught me and helped me discover it.
