Tiny Onion Cooking School: Fresh Scones and Homemade Butter
What's included
1 live meeting
55 mins in-class hoursClass Experience
We will use the Zoom app to interact and connect live in our own kitchens and Annalee will instruct the group through the scone and butter recipe with tips and advice as we bake together. All ingredients and tools will be ready before we log into the live class so our time will be used efficiently to complete both recipes. Recipes will be emailed ahead of time so parents can prepare and shop. Parents can be alongside a learner to assist, but the aim is for this experience to be hands-on for the young students to be able to do on their own. Annalee will answer questions and guide.
Learning Goals
Basic baking techniques for scones and biscuits and fresh butter with tips and advice for variations. Use of kitchen equipment and tools for baking.

Supply List
The ingredient list and tools necessary will be emailed to each student a week ahead of class time to be ready. Basic kitchen tools will be used, a working oven, and minimal ingredients list using what can be found in most pantries. RECIPES for this class are below for easy planning ahead: Fruit Scones 2 cups flour 1/2 cup sugar 1 Tablespoon baking powder 1/2 teaspoon salt 1 stick cold unsalted butter 1 egg 1/2 cup cold heavy cream, buttermilk, or milk 1 Tablespoon orange juice, lemon juice, or additional milk Zest of an orange (optional) 1 cup berries or fruit, fresh or frozen, Preheat the oven to 425F degrees and line a sheet pan with parchment paper. In a large mixing bowl, combine the dry ingredients. Add the cold butter by either grating it into the bowl or slicing it and using a pastry cutter to cut it into the dry mix. Toss in the fruit. Whisk the cream, egg, juice, and zest in a bowl and then add it to the dry mix. Stir JUST until it’s all combined, do not overmix. Gently move the dough to a floured surface and without touching it too much, shape it quickly into a round disk, then slice it into pie-shaped pieces and place each scone on the baking sheet. Brush the tops with a little milk or cream, then sprinkle with sugar. Bake for 12-15 minutes, until they are golden brown. OPTIONAL GLAZE: 1 cup powdered sugar Zest of 1 orange 2-4 Tablespoons orange juice Mix all the ingredients in a small bowl with a whisk, then brush or drizzle over the scones when they are completely cool! Store leftovers in an airtight container. Homemade Butter 2 cups heavy cream 1/4 teaspoon salt Pour the cream into a food processor or blender. Process or blend for about 10 minutes, until the butter separates. Strain off the liquid (which is buttermilk!! Save it!) Season the butter with salt and press it into a small bowl with the back of a spoon to push out any remaining liquid left.
