Class Experience

This is a review of my Nutrition class for those aged 8-12 years old which gives you insight into my teaching style:

My daughter really enjoys Ms. Brandy! She’s so fun and personable and easy to talk with, but she’s also extremely knowledgeable and skilled in breaking down really complex subject material into simpler doses for younger learners. My child has taken this and her class on blood types, and we look forward to enrolling in more classes with Ms. Brandy!

Day 1
Please bring a canned good, boxed good, or any other food product that has a label to class. These products don't necessarily have to be healthy. You can basically bring whatever is readily available in your kitchen cabinet or pantry.
We will compare and contrast labels.Then, I will facilitate a discussion about filtering out what the food labels are teaching us.
Also, there will be a discussion on how the marketing of products affects what we buy. 
There will a handout available to students for reference.
I will also lead an experiment that can easily be followed by the students with household items.

Day 2
Water-Soluble Vitamins- PowerPoint Presentation and Discussions will not only be allowed but encouraged. 
Optional Activity-Bring fruit(s) to class. You are welcomed to eat it in class but it is totally up to you. 
A short optional research project will be explained. There will be time in class to work on project for its presentation on Friday. 


Day 3
Water- Soluble Vitamins (Continued)- PowerPoint Presentation and Discussion
Optional Activity-Bring Protein snack that you like. An experiment will be demonstrated by me.
Fat-Soluble Vitamins and Select Minerals . We will also study vitamins A,D,E,K


Day 4
We will discuss organic, GMO, and sugar laden foods.

Day 5
"Think Like a Doctor  Day"- Case Study Analysis and Review.  We will be presented with stories of patients. The learner as "the doctor" will determine the patient's vitamin deficiency based on the patient's physical examination, symptoms, and verbal report. As a group, we will uncover the disease state that the patient is suffering with based on a vitamin or mineral deficiency. This interactive activity will draw on the information that we learned together all week. In addition, the following disease states will be discussed: Scurvy, Osteoporosis, Iron-Deficiency, Anemia, Dehydration, and Rickets.


I have Masters in Public Health with a concentration in Nutrition so I am well-trained in the topic and ready to talk. There will be no  recommendations of diets made.The focus will be vitamins and how deficiencies can cause disease.

I’m a native of New Orleans. I am also a joyful homeschool mother of one and a passionate teacher of Biology, Chemistry, and Nutrition. I not only delight in teaching these subjects well but also enjoy creating a fun and stimulating environment in which to learn. Although I teach the hard sciences, I focus on making those academic  classes amusing with engaging activities and by adding my sense of humor to the mix.  

 I enjoy debate, reading, writing well, cooking, and swimming in my spare time. I was a local Scripps-Howard spelling bee champion. I have also won numerous writing awards. I am proud to be on the board of the Catholic Homeschoolers for the Archdiocese of Galveston/Houston.

 I have a degree in Biology with a minor in Chemistry from Xavier University of Louisiana. I have a Master’s degree in Public Health from Tulane School of Public Health and Tropical Medicine with a concentration in Nutrition. I have work experience in laboratory research, medical sales, and medical/editing writing. I completed coursework in Gross Anatomy, Histology, Biochemistry, Statistics, Cardiology, Pulmonology, and Pharmacology at Case Western Reserve School of Medicine in Cleveland, OH. I was formerly employed by Johnson & Johnson and GlaxoSmithkline. I tutor high school biology and I have experience with AP Biology and the Biology CLEP (College Level Examination Program) exam.  I like catering to each child’s interests and responding to each question. I am also an ACE Educator.

1)This was my daughter's third class with Mrs. Brandy and it certainly won't be her last.  She learned a lot about chemistry, including high school terms, in an easy to understand way and had fun while doing so.  She enjoyed the camaraderie with the other students, the hands on experiments and the Kahoot.
