Class Experience
Bakers will learn how to make five-ingredient banana waffles that are vegan friendly.
Ms. Roxana's Qualifications I have a Plant-Based Nutrition Certificate from eCornell's T. Colin Campbell Center for Nutrition Studies. In addition, I have a Master's of Arts in Bilingual/Bicultural Childhood Education from Columbia University's Teachers College and a Childhood Education, Early Childhood Education, Bilingual Extension, and Special Education teaching certificate from the NY State Department of Education. I have taught in NYC schools for the past 7 years and am very passionate about teaching Plant-Based Nutrition and Education.
30 minutes per week in class, and maybe some time outside of class.
In this cooking class, safety is one of my top priorities. With this in mind, we will be using a waffle maker and high speed blender, and/or food processor (if you will be using a blender that is not high-speed and cannot turn the oats into oat flour). For this portion, we ask that you kindly assist your child completing the steps that require these appliances. With food allergies in mind, this recipe lends itself to using the dairy-free milk of your choice such as almond milk, soy milk, walnut milk, oat milk, brazil nut milk, cashew milk, coconut milk, rice milk, etc. In the case your child is allergic to tree nuts: I recommend using oat or rice milk.
