We will spend the 3 days of the week exploring 3 teas that influenced America! We will brew and taste our teas the old fashion way and discuss the history of hyson, bohea, and souchong teas. We will also look very briefly at the darker side of tea harvesting to see how some of the tea produced has used exploited workers and how the Plantation Act of 1951 has made progress in protecting these workers. We will learn how to choose teas from companies who care for thier workers just as much as they care for the quality of tea they produce. This class will require you to put your nose and taste buds to work discovering the different aromas and tastes of the teas the American colonists drank before the revolution and eventually tossed in the harbor to protest the British taxes. We will write down our discoveries and share stories of tea in America. Class must have a minimum of 3 students. Day 1: Hyson tea — a green tea that comes from the Anhui province of China Day 2: bohea tea — a black tea that comes from the Fujian region of China Day 3: Souchong tea — a black tea that comes from the Wuyi Mountains of China

Parental Guidance
This class will focus on the tasting of teas and not the health benefits of the beverage. It is meant to introduce students to historical accounts of the teas mentioned. Because the cultivation of tea has sometimes had a negative and potentially controversial history for some cultures and people groups we will focus our classes on the general harvesting of tea in the China and India regions while addressing tea companies that use sustainable, fair trade practices without exploiting workers. The price of enrollment also includes samples of all teas listed above. But you must provide in a private email to the instructor a mailing address at least one week in advance for US students and two weeks in advance for international students.

You will need hot water, a tea cup & saucer, teapot, strainer, spoon, and towel You might also want a “slop bowl” to empty your tea into if you don’t have 3 cups You will also need pen and paper to write down your tea experience
