There will be about 10 minutes of prep work before class. Students should have all supplies ready to go at class time.

Class Experience

Come join us as we make easy versions of delicious, not too sweet Mexican Hot Chocolate in a slow cooker and Candy Cane Fudge. You can choose to make chocolate or white chocolate versions of the fudge, it is up to you. The Fudge makes a great gift for teachers, friends and family members or you can enjoy it while sipping your hot chocolate.  
Please note that for the Hot Chocolate you can use a slow cooker, or an instant pot with slow cooking capability for this class.  It is possible to simmer over the stove, but I will be demonstrating with the slow cooker.  I will explain how to do it on the stove for students.  The recipe cooks on low for 1 hour.  As a class we will go over safety, but parents please note that we will be working with melted chocolate for the fudge, so students may need assistance. On your supply list, I will have one thing to do for prep ahead of time that should take about ten minutes.  Although Outschool asks parents to stay off camera, it is my hope that you will help your learner.  Please feel free to ask questions. 

Please note:  For the White Chocolate Peppermint Fudge you need Vanilla Chips, not White Chocolate Chips.  They have a cocoa butter base.  I use Giraldi.

Supply List
Mexican Hot Chocolate
	5 cups Whole Milk
	1/2 cup Unsweetened Hershey’s Cocoa Powder
	1/2 cup White Sugar
	5 Cinnamon Sticks
	1/8 tsp. Cayenne
	1 cup Hot Water 

Slow Cooker Needed
	

Candy Cane Fudge (White)
    2 (10 ounce) packages vanilla chips
    1 (14 ounce) can sweetened condensed milk
    1/2 teaspoon peppermint extract
    1 1/2 cups crushed candy canes
    1 dash red food coloring
 
Candy Cane Fudge (Chocolate-your choice)
    2 cups semi-sweet chocolate chips
    one 14 oz can sweetened condensed milk
    1 tsp vanilla extract
    ¼ cup chopped candy canes about 2-3 large candy canes
Note:  Both recipes call for aluminum foil and cooking spray or butter to grease pan  OR
     Parchment paper.  It is best to use an 8x8 inch baking pan or something similar.

It is my pleasure to have the opportunity to work with you and your favorite student(s).  I have over 20 years of teaching experience, from Pre-K through Graduate School.  I have multiple and advanced degrees and I am a former Professor (Canisius College in NY), a retired attorney (criminal, international and family), and I was the History Department Chair /History teacher at a nontraditional Charter school at the High School Level for 10 years. I coach Speech and Debate on the NSDA and TOC circuits (Tabroom). My students have gone on to win prestigous tournaments such as Harvard, and received national bids.    My teaching certification was in Middle and High School History/Government/Economics.  I am also certified in multiple AP courses with extensive continuing development. Recently I received my mastery life coaching certification in Emotional Intelligence, Cognitive Behavioral Therapy, Self-Confidence and REBT (Rational Emotive Behavior Techniques).  I also just finished a Mastery Life Coach certification in Mindset Techniques and both Confidence and CBT certificates.  For over 20 years, I have worked as a Law Guardian in NYS with children and teens going through both Family and Criminal Court Proceeding.  I have had multiple and extensive training with trauma and children in crisis and currently contract with Probation Departments around the US to teach a legal based class (Cyber Safety) for those students that have made mistakes on the internet.  I learned so much spending many years as an attorney and in multiple educational settings.  I also take students and parents overseas on Educational Tours and have been blessed to travel to such places as China, Japan, Mexico, Paris, Rome, and Greece.  

My teaching style is varied.  I try to use as many techniques and modes of media as possible in each of my classes.  My two youngest children are neurodiverse (Autistic, Apraxic, Cognitive and Auditory Delays).  Working with my own children has taught me that education must be personalized to each learner for maximum impact.  I encourage all students and their parents to contact me so that we can tailor each of my classes to your strengths and those skills you hope to work on the most. Please note that I will allow higher level students who are underage in my classes, or older students who have difficulties in classes that are more suited to their level. Parents will be notified if there will be a student allowed that is not in our age group.  Please contact me to discuss.  I look forward to meeting you all.

I pride myself on being inclusive and I do have neurodiverse learners in my classrooms and making sure I find appropriate sections for all students.

  I want parents to reach out so we can develop a positive experience for their student.  Class placement is after much consideration and discussions with parents. If you do not need to discuss placement with me and believe your child is a good fit, that is fine as well.  I get a lot of questions about my age groups, they are flexible.  Maturity and academic strength really varies per individual, so you may see various age ranges.
