Have you been wanting to make your own bread and have your own homestead? Have you made your own sourdough starter, but aren't sure if you're doing it correctly? Are you overwhelmed with the process and don't know where to start? Are you stuck with so much discard and you don't know what to do with it all?! Look no further! In this class I will give you a step by step guide on how to create your own sourdough starter. We will discuss the types of water and flour and the time table for this procedure. I will teach you how to bake with discard, active starter, and how to trouble shoot a starter that is slow to rise. Each pre-recorded lesson will include power point presentations with pictures and my explanation of each slide. I will also give you several discard ideas with visual representations of my own baking. Videos and demonstrations and recipes will be provided for the bread making lessons. In the last week I will teach you how to make your own sourdough loaves with active starter and different kinds of flours. I will post all lessons for the week on Monday mornings at 6am CST (see below for a weekly breakdown). Students are welcome to post questions and comments at any time during the course. I encourage learners to post pictures and videos of their own sourdough journey so we can collaborate and learn from one another, but it is not required. Week 1: - Lesson 1 (24 minutes) : What is sourdough? - Lesson 2 (32 minutes) : How to make your own sourdough starter troubleshooting a lazy starter (short demo provided- 1.5 minutes) Week 2: -Lesson 1: Discard only recipes (16 min) pictures from personal experiences provided in addition to recipe resources) (Demo crepe video provided- 3 minutes) -Lesson 2: Discard Ideas(23 minutes) pictures from personal experiences provided in addition to recipe resources) Week 3: -Lesson 1: Discard sandwich loaves (17 min)(bread flour or all purpose) (short demo video provided) -Lesson 2: Discard boules (11 min) (bread flour or all purpose) (short demo video provided) Week 4: -Lesson 1: Making sandwich loaves with active starter(17 minutes) (using bread flour) and other active starter ideas(short demo video provided) -Lesson 2: (28 minutes)Making einkorn boules with active starter, variations, vocabulary, and storing (short demo video provided)

Parental guidance for the lessons are not required. However, if the student chooses to make these recipes, please take safety precautions for using knives, ovens, food processors, mixers, etc.

No supplies are needed to take this class. However, if you choose to try the recipes the ingredients and supplies will be listed in each lesson.
