Class Experience

In this course your student will learn the basic recipe for making fresh egg pasta and then use it to create different dishes with complimentary sauce. 

Lessons:
Lesson 1: Fresh Egg Pasta
Lesson 2: Mushroom Ravioli
Lesson: Spinach Pasta
Lesson 4: Bowtie Pasta

Students are encouraged to share pictures of the finished product with me in the classroom. I will be available for any questions during the duration of this course.

Syllabus

4 Lessons
over 4 Weeks
Lesson 1:
Fresh Egg Pasta
 In this lesson your student will learn the basic recipe for egg pasta. Your student will learn the history of Fresh pasta. They will practice it by learning how to knead, roll, cut and cook the pasta. They will also make a simple Butter Sauce to go with their delicate pasta. 
Lesson 2:
Mushroom Ravioli
 In this lesson your student will learn to make a stuffed pasta or ravioli.  Students will learn about the history of this pasta. They will practice by using the same fresh egg pasta recipe from lesson 1. Students can opt to stuff their ravioli with mushrooms or cheese or any other appropriate ingredient they would like. A simple Parmesan Cream Sauce accompanies this dish. Students will learn the difference between fresh egg pasta and dried shelf table pasta found in the grocery. 
Lesson 3:
Spinach Pasta
 In this lesson your student will take the basic egg pasta recipe and learn how to add a vegetable to it. This will create a green spinach pasta! Students will learn other ways to color pasta. From this lesson, students will be equipped with the knowledge of how to "add in" things to their basic pasta recipe in a creative way. This pasta is served with an easy Alfredo Sauce. 
Lesson 4:
Bowtie Pasta
 In this lesson your student will use the basic egg pasta recipe and learn how to make it into a shape. Students learn more about the art of shaping pasta. In this lesson the shape is the bowtie pasta. After taking this lesson students will be equipped to experiment in the future by making different pasta shapes on their own. 

Other Details

Parental Guidance
While kitchen safety will be addressed in each class, parental supervision is recommended for students who are not familiar with the use of the oven, stove top, knives and other kitchen equipment we will use. If your student has any allergies and you need a recipe with substitutions, please contact me for a personalized recipe.
Supply List
You do not need a pasta roller or cutter for this class, though it will help. I will demonstrate both techniques (pasta roller and using a rolling pin and knife or pizza cutter) Please message me if you have any questions.
The recipe that will be posted each week with the video and will contain a supply list. The supply list will list everything your student needs to have in place before class starts. For example, gathering ingredients, bowls, baking dishes, measuring cups etc. Usually these items are already in your kitchen. This is called Mise En Place and I would list this on each recipe for class.

Hello! My name is Athalia and I have a degree in Culinary Arts from Le Cordon Bleu, in addition to my bachelors degree in Psychology. I completed my culinary internship at Walt Disney World Resort in Florida through the Disney College Program. I worked at the All Star Movies Resort preparing meals and cooking in front of guests.  After that, I worked for Aramark as a Catering Cook 1 at the University of Central Florida. 
When our son was born, I left the formal culinary world and embarked on my own culinary adventure. I successfully ran my own catering company and cake business. I  have taught cooking classes to kids and adults, both in person and online. I have hosted cooking classes for kids at community centers, in their homes, homeschool co-cops and churches
I am now a homeschool Mom of 1 that still enjoys sharing my love for culinary arts with kids. I hope to share my knowledge that I have gained over these 12+ years with your student. I want to make sure that after taking my classes, your student is more knowledgeable and confident in their own culinary endeavors. 

I am originally from the island of Trinidad and Tobago and really enjoy sharing island style cooking and Caribbean history with the kids I teach. I enjoy teaching all kinds of cuisine though.I like to engage my kids and allow them to ask many questions until they understand what they are doing. I am always creating and trying new dishes, so keep looking out for fun interactive and flexible classes.
