Class Experience

Students often request procedures for recipes.  I am teaching specific techniques that are useful in a bevy of recipes, which is why I will provide an ingredient list only before class.  Because this class is recorded and the recording is yours to keep, this serves as your procedures if you need a visual refresher.  I will provide written procedures the day before class.  The ingredients list combined with the procedures make a complete recipe.
1 Cup Onions, Diced and sauteed in class 1 Cup Carrots, Diced and sauteed in class 1/2 Cup Celery, Diced and sauteed in in class 2-28 ounce cans of diced or crushed tomatoes 1-28 ounce can of tomato puree or passata (should be smooth) 1-32 ounce container of vegetable, chicken, or beef stock (whichever you prefer) *Cheesecloth or coffee filters to make a sachet *Butchers Twine or durable String to tie sachet 2-6 Cloves Crushed Fresh Garlic (this is usually a personal preference) 1 Bay Leaf 2 Sprigs Fresh Thyme 1 Small Sprig Fresh Rosemary 2 Sprigs Fresh Oregano 1 Tsp Black Peppercorns (If you only have access to Dry Herbs, thyme = 2 tsp, rosemary = 1 tsp, oregano = 2 tsp) To Taste Kosher or Sea Salt Olive Oil as needed Other tools needed: Chef's Knife Cutting Board Stirring Spoon Large Pot with Lid Blender, Food Mill, or Ricer Glass Jars if you would like to jar this for later! Please refer to my Amazon link for a curated list of ingredients and supplies you may want for this class.
Learners will not need to use any apps or websites beyond the standard Outschool tools.
1 hour 10 minutes per week in class, and maybe some time outside of class.
This class will require the use of a stove and an oven, in addition to using a knife on occasion to cut various items.  If you are not comfortable using hot or sharp kitchen items on your own, please have a parent nearby to assist you.  However, it is required that parents remain off camera for the duration of the class.
