In this class, we will cook one of my favorite vegan meals. It is very hearty, full of nutrients, and can be prepared in advance! I will provide an educational youtube video of how to prepare the meal that can be watched ahead of time. **You will need help from your guardians to safely complete this recipe.** After you have your materials ready and have watched the instructional video, we will meet for a question and answer session. In this Zoom session, I can answer any questions you have while you prepare your meal. As long as you have an adult to assist you with the oven and knives, you do not need any previous cooking experience.
Learning Goals
Students will learn nutritional values of beets, carrots, sweet potatoes, brussels sprouts, olive oil, garlic, rice, and quinoa.
Students will prepare a vegan meal with assistance from an adult.
Students will build confidence by learning to cook a healthy meal.

A parent or guardian will need to assist with cutting and use of the oven.
Supply List
Grains: **Choose one** 1.Jasmine Rice (2-4 cups depending on your family size) 2.Quinoa (2-4 cups depending on your family size) Vegetables: 2-3 Medium Beets 1 lb Brussels Sprouts (whole, not shredded) **Choose Carrots, Sweet Potatoes, or both** 5 Large Carrots 3 Medium Sweet Potatoes Cooking Oil: Olive Oil, or your preferred cooking oil. Seasoning: Salt or Sea Salt Minced or Diced Garlic Optional Topping: Shredded Cheese (not vegan, but still vegetarian)
