It's true, you should eat 3 solid meals a day, with breakfast being the most important. Most times we turn to ready-made toaster waffles, pop tarts or yes, cereal as our breakfast but there are so many delicious options out there! Join us in class as we make brunch (breakfast or lunch, whichever time it is for you). For the next 12 weeks, we will work step by step to create the following meal items: Week 1 - Pancakes (protein, plain, mix-ins and flavorings) Week 2 - Banana Bran Muffins Week 3 - Oatmeal and Over-Night Oats (plain and flavors) Week 4 - Huevos Rancheros Week 5 - Complete Old Fashioned Breakfast with Toast, Eggs (in all fashions), Bacon, Sausage and Hashbrowns Week 6 - Fruit Smoothie Bowls Week 7 - Burritos Week 8 - Chiliquiles Week 9 - Breakfast Tacos Week 10 - French Toast Week 11 - Breakfast Sandwich Week 12 - Biscuits and Sausage Gravy I'll be with you every step of the way to answer questions and guide in any way I can. Don't worry, I'm going to be cooking right alongside you to give you visual help as well as conversational. Each class will feature a recipe card, detailing all you need as far as kitchen supplies and ingredients for the week. The recipe cards will be sent out the Sunday before each class to ensure you have plenty of time to gather ingredients and ask any questions you may have. You are welcome to print out the cards so that students can have a stack of recipes to have available whenever they so need. I welcome creativity and adapting recipes to appeal to individual flavor pallets. While some recipes need exact measurements, most have plenty of wiggle room. If there is an ingredient you do not prefer, please let me know, and I can see what we can substitute with. Recipes can also be adapted to Gluten Free, Vegetarian, Vegan and Dairy Free. Please feel free to ask any questions you may have.

Teacher expertise and credentials
Bachelor's Degree in English from Southern New Hampshire University
Hi there! I’m Tabitha Rivera and I am happy to meet you. A little about my background, I have a degree in English and Creative Writing and have been an online teacher for 6 years now. I also have 18 years teaching experience in a classroom setting in daycare, tutoring and homeschooling. I love learning and believe that everyone should have something fun to learn and grow with. I enjoy fostering in a student’s learning by providing thought-provoking out-of-the-box lessons that keep my learners asking questions and thinking long after the lesson is over. I also believe that learning should be fun! My classes provide hands on lessons that get my students moving and learning in new environments. My favorite part of teaching is answering my student’s questions and seeing them make new discoveries while following their passions.
I currently live in New Mexico with my daughter and 2 dogs. In my free time I enjoy working on writing my book, reading, traveling, cooking and baking. I also love to learn new languages and about every culture. I currently can speak 6 languages and look forward to adding more to my collection.
I look forward to seeing your child in my classroom! Thanks for stopping by!
