Class Experience

How to make delicious gluten-free banana muffins using almond flour. I will demonstrate each step and make it in real time with the students. Ingredient list will be given ahead of time as a class page posting. Options for variations of flavors will be given. This will be lecture/demonstration with slideshows as needed.  My teaching style is relaxed. Prep time should be 20-30 minutes and baking time is 20-25 minutes based on your oven. 
I have been a teacher for about 15 years in K-12 settings teaching World Language. However, my hobby is baking.  I have been on a personal journey to restore my own gut health and developed this recipe myself.

Allergy warning: Nut, Egg, Dairy This recipe uses nut flour-specifically almond flour and ghee (clarified butter). Coconut oil can be substituted for the ghee. Possibly applesauce or olive oil can be substituted for the ghee but I have not tested these variations yet.

Ingredient List:
List: 2 1/2 cups almond flour
1/4 cup ghee (clarified butter) or coconut oil
1/3 cup honey
1 ripe banana
1 zucchini
3 eggs 
baking soda
salt
vanilla extract
walnuts; chopped
variation: chopped fruit of your choice. blueberries and strawberries work well.

I primarily teach Spanish classes and some ESL and reading classes in student's homes.  I have over 16 years of experience teaching in K-11th grades in public and private schools.  I have a B.A. in  Spanish and M.Ed.in Teaching Additional Languages with a concentration in TESOL from UGA. I have traveled to Central and South America quite a bit as well; so I have real world experience. 

I believe children learn best in a fun and relaxed environment. Mistakes are allowed.  In my classes you may see song, dance, and puppetry as tools for learning. 

In my spare time, you may find me reading, rollerblading, playing tennis or the piano!
I hope I have the opportunity to share my love of the Spanish language and culture with your child!
