Learn the art of Basic Pasta Making. Come and let Chef Joe show you how to make your favorite Italian pastas and create the perfect sauce to accompany your amazing dish! Chef Joe will introduce himself and give you a brief summary of his background and then introduce the dish you'll be cooking: Fresh Spaghetti with Authentic Bolognese sauce; He will then ask you to introduce yourself and do some fun icebreakers to make the group more comfortable. Students will get basic step by step instructions from watching a full demonstration by Chef Joe. The students will then be asked to reproduce the recipes by their ability to follow directions. Chef Joe will interact with the student making sure that their dish is successful.
Each learner will be supplied with recipe handouts prior to the start of each class. SUPPLY LIST: Pasta Machine (can be electric or manual) Food Processor Large wooden board (or counter top with large clean space Pizza Cutter Sheet Pan Wooden spoon Large Pasta Pot Large skillet Sharp knife 5 Large Eggs 1 lb Durum Flour (Can use AP flour) 1/4 cup Parmesan cheese 8 oz Pancetta, small dice 20 oz (1-1/4 lb) Ground veal 1/2 onion, fine dice 2 celery ribs, fine dice 1 large carrot, fine dice 1/2 cup tomato paste 1 cup beef broth 1/2 cup Dry white wine 2 cups Milk 3 Tbsp Heavy cream Salt & Pepper, to taste Strainer or skimmer Tongs
Feedback is continual and ongoing throughout the class both collectively and individually. At the end of the class, we will all taste our respective dishes and critique the process and have a Q & A session to complete our class.
2 hours per week in class, and maybe some time outside of class.
As we will be handling knives (and other sharp objects) as well as cooking on HOT surfaces we would ask for parental supervision along the way to keep our students safe and injury free.
