In this cooking camp class, we will be making all Italian meals and snacks. We will be making calzones, bruschetta, and pasta carbonara. Most of these meals/snacks are simple and fun. Simple cooking experience is needed, but because these recipes are simple, advanced knowledge is not necessary. We will be using the oven, stove top and knifes, so please ensure your learner is comfortable with this, or please be present. The supply list has ingredients for 2 or four people. ***Please review the supply list and ensure that you have enough ingredients for the amount of family members your learner is cooking for. *** If you have any questions, please feel free to contact me. :) In this class students will learn by doing! There will not be any Powerpoints or visuals; we will jump right into the kitchen and get to cooking! This lesson will take us from preparation through the completion of the meal. We will review food and kitchen safety for the recipe, discuss ingredients/alternatives, and any equipment required for the recipe I will demonstrate* each step of the cooking process, while having a continued discussion with students along the way. Students will be provided with the recipe through the Outschool discussion board for the class and students are encouraged to print it out to bring to class. Students are encouraged to show their own progress and the finished progress with others along the way, or after class on the discussion board (or email a picture to me!) The goal of this course is to provide the student with new skills, confidence in the kitchen, and of course, yummy recipes for the whole family to enjoy! *I will NOT be cooking every class. I will, however, be demonstrating with my hands and words and have completed hundreds of cooking classes without issue with this technique :)

Supply List
Bruschetta (for 2): 1-1/2 pounds plum tomatoes, seeded and cut into small dice 1/4 cup chopped fresh basil 1/4 cup and 2 tablespoons extra-virgin olive oil, divided 1 tablespoon and 2-3/4 teaspoons finely chopped red onion 2 large cloves garlic, minced 2 teaspoons red wine vinegar freshly ground black pepper to taste 1 French baguette, cut into 1/2-inch thick slices 1 tablespoon high-quality balsamic vinegar Knife/cutting board Oven Cookie sheet Measuring equipment Basting brush (cooking brush for spreading oil on bread) Big spoon for mixing Big bowl Pasta Carbonara (for 2): 1/2 pound linguine or spaghetti 2 eggs 1 cups grated Pecorino Romano 2.5 ounces guanciale* (can sub pancetta if necessary) 1 tablespoon extra-virgin olive oil Salt, cracked black pepper *Guanciale is pork jowl or cheeks. I personally can not find this in my local store, so you can substitute for pancetta or bacon, whatever you can find. If you are not a pork eater, I recommend substituting turkey bacon. One large pot for pasta boiling, stove top safe utensils, one medium/large skillet for cooking meat, grater for cheese if not already grated, knife, cutting board. Calzones (for four): 1 lb pizza dough (you can find refrigerated dough by the biscuits at the store for easier prep!) 0.5 cup pizza sauce 0.5 cup pepperoni (or whatever meat you'd like! optional!) 1 cup of favorite cheese (moz, parm, ricotta, etc) 1 tbsp oil 1/4 cup parmesan cheese (or second fav cheese!) Flour (optional, needed if you have fresh dough) ***Students can bring whatever "toppings" they like for their calzone.**** Oven, cookie sheet, knife, rolling pin, fork, cutting board.

Hello! My name is Carissa!
I have been teaching online for the past three years. I have taught ESL toyoung Chinese learners. I very much enjoy working and learning alongside my students.
I have a Bachelors of Arts in Psychology from the University of Missouri and a minor in Sociology. I spent the five years after graduating in many different social work fields before finding online teaching.
My classes include, but are not limited to, cooking, baking, travel, photography, graphic design, and elementary English. I look forward to adding more classes as I grow and brainstorm with my students!
In my spare time, I enjoy cooking, spending time with friends, playing with my cat, and taking pictures. I also enjoy traveling. I have traveled all around the world including Italy, Iceland, the UK and France. I have also traveled many places in the United States. I look forward to sharing my traveling experiences with you in the future!
