Description

Class Experience

Students will learn the basics of navigating life while eating a gluten free diet. Armed with the right knowledge, tools, and support, they will gain self-confidence and know how to advocate for themselves. By the end of this class, eating gluten free should not feel intimidating, but rather it should feel freeing.  
Although I am not a medical professional, I have been eating a medically necessary gluten free diet for over ten years. This class is not intended to diagnose or treat any disease. I will not be providing specific medical or nutrition advice. The focus of this class is navigating day-to-day life while eating a gluten free diet. My information comes from ten years of eating gluten free, research, and learning from professionals and experts. I will be referencing these experts throughout this class for every informative post and video. 
Students are expected to participate in weekly discussions and collaborations. They will also be provided with recipes to try making (with parental assistance as needed) in the fourth and fifth weeks. 
Students will need ingredients for the recipes they will make in weeks four and five. An ingredient list will be provided for weeks four and five at the beginning of weeks three and four respectively. Please contact me with any other dietary restrictions your learner has besides gluten so I can adjust my recipes accordingly. If I do not hear from you, I will assume there are no other allergies I need to take into consideration.
In addition to the Outschool classroom, this class uses:
No live meetings, and maybe some time outside of class.
This class is intended for learners who are on a medically required gluten free diet (i.e., learners who have been diagnosed with Celiac Disease or gluten intolerance). Learners who are eating gluten free by choice or who want to learn more about what life is like for people who eat gluten free are welcome in this class. However, they should come to class knowing that the posts and videos will be presented with learners who are medically required to eat gluten free in mind. 

Additionally, this class is not intended to diagnose or treat any disease. I welcome questions from learners at any time, but will not be providing specific medical advice. That job is reserved for their medical team. This class focuses solely on navigating life on a medically necessary gluten free diet. 

Finally, I try to gear the recipes for maximum learner independence, but younger learners should not cook without some level of adult supervision. The amount of supervision you provide while they cook is up to you: you know your learner and their supervision needs best.
