In this cooking camp class, we will be making Indian meals and snacks. We will be making naan bread, Indian Butter Chicken and Biryani. Most of these meals/snacks are simple and fun. Simple cooking experience is needed, but because these recipes are simple, advanced knowledge is not necessary. We will be using the oven, stove top and knifes, so please ensure your learner is comfortable with this, or please be present. Indian Butter Chicken: This recipe will feed approx. 4 family members (~one chicken breast per person) In parentheses is the portions for 2 people! For chicken and marinade: ~ 2 lbs boneless, skinless chicken breast (~1 lb for two people) cut into cubes 2 tbsp lemon juice (1 tbsp) 2 cloves garlic minced (1 clove) 1 tbsp garam masala (1/2 tbsp) 1 tsp kosher salt (1/2 tsp) ****Please cut and marinate chicken the night before. We will use the marinated chicken in class.**** For sauce: ¼ cup vegetable oil (2 tbsp) 2 ½ cups chopped onion about 2 medium-large (1 1/4 cup) 2 tbsp coarsely chopped garlic (1 tbsp) 2 tbsp garam masala (1 tbsp) 2 tsp paprika (1 tsp) ¼ tsp cinnamon (sprinkle) 2 tsp kosher salt or to taste (1 tsp) 2 cups diced canned tomatoes (1 cup) ¾ cup heavy cream or whipping cream (6 tbsp) NOT WHIPPED CREAM** 2 tbsp butter (1 tbsp) Chopped cilantro to garnish (optional) One large skillet with tall sides (we will be mixing liquids and taller sides prevent spills), stirring utensil for stove top, blender, spatula, lid for skillet. WE WILL MAKE DOUGH PRIOR TO CLASS WITH A VIDEO THAT I SEND. IN CLASS WE WILL ROLL AND COOK BREAD. PLEASE LET RISE AT LEAST ONE HOUR PRIOR. :) **** Naan (makes 8 pieces) Bread Ingredients: 1/4 cup warm water 2 teaspoons granulated sugar 1 1/2 teaspoons active dry yeast or instant (rapid rise) 3/4 cup warm milk 3/4 cup plain Greek yogurt or natural plain yogurt 1/4 cup vegetable oil plus 2 tablespoons extra for cooking 2 cloves garlic minced 4 cups plain flour plus extra for dusting -- 19 1/2 oz. or 560g 1 teaspoon baking powder 1 teaspoon salt GARLIC BUTTER TOPPING (optional) 3 tablespoons butter, melted 2 cloves garlic, minced 1 teaspoon fresh chopped cilantro or parsley Big mixing bowl, small bowl, knife, rolling pin, brush (if wanting garlic butter topping), and skillet to cook bread in (flat skillet, or cast iron works best!) Also will need counter room to roll out bread and make a flour-y mess :) Biryani (recipe listed is for Chicken, but you can use beef or if you would like to sub for veggies, we can do this too.) Ingredients 1.5 lbs chicken thighs , skin on, bone in, halved along bone MARINADE (PLEASE MARINATE CHICKEN 1 HOUR TO 24 HOURS IN ADVANCE): 2/3 cup yoghurt , plain 1/2 cup water 2 tbsp vegetable oil (or other plain oil) 6 garlic cloves , minced 2 tsp finely grated fresh ginger 1/8 tsp ground turmeric 1/4 tsp cinnamon 1/2 tsp cayenne (adjust spiciness to taste) 1/2 tsp ground cardamom 2 tsp garam marsala 2 tsp coriander 1 tbsp cumin 2 tbsp paprika , sweet / ordinary (not smoked) 1 3/4 tsp salt PAR BOILED RICE: 2 tbsp salt 10 cloves 5 dried bay leaves 1 star anise 6 green cardamon pods 2 1/4 cups uncooked basmati rice 2 medium onions, halved and finely sliced 1 cup oil for frying 1 tsp saffron threads (loosely packed) 2 tbsp warm water 1 cup coriander / cilantro , chopped Toppings: 1/4 cup ghee or unsalted butter, melted Chopped coriander / cilantro (optional) Yoghurt (optional) 2 big pots, lids, big container to marinate chicken in, small pot to fry onions in and mesh strainer (or tongs) to pull the fried onions out
Learners will not need to use any apps or websites beyond the standard Outschool tools.
2 hours 45 minutes per week in class, and maybe some time outside of class.
In this we will be using the oven, stove top, knives, etc. Please be present if your child needs assistance.
