How to Make Sweet & Savoury Sauces! Cheese, Tomato, Pudding & Caramel (Flex)

Learn the basic cooking ratios for mother sauces and how to create a great basic cheese sauce, and how to improvise your own, what to do for a cooking sweet pudding and how to make homemade caramel sauce.

Class Experience

Want to make a home version of the beloved family favorite, macaroni and cheese? Or create a delicious cheese sauce to cover your healthy veggies? Ever wondering how hard it would be to make your own pudding from scratch, without a box mix? How about some yummy caramel sauce topping? Or maybe you want to make homemade tomato pasta sauce?

Join me for 4 weeks as we explore the basic ratios for these sauces, so that you can learn how to make and improvise your own delicious recipes!  What will be covered:
* The first class will teach you the logic behind the French "mother sauce" of Béchamel and its "daughter" Mornay, enabling you to create your own version!  This is how to make mac n cheese at home, so much healthier than store-bought box mix!
* The second class will cover cooked egg puddings.  Using this as a base, you can branch out into some delicious variations!
* The third class will explain how to make a basic tomato sauce for pasta, which can be modified as a pizza sauce or a dipping sauce.
* The fourth class will be the homemade caramel sauce, so delicious on top of ice cream and fruits!

Students will watch the videos on their own time, and I will be available to discuss the process and see their creation! Students will participate with the others and teacher in weekly class discussions and brag posts, showing off their unique creations!  My teaching style is to teach the logic behind the recipes, which can be tricky, so that students are empowered to create their own unique dishes.

In order to participate, students must be familiar with basic kitchen tools like spoons, knives, whisks and pots. During the cooking, beginner students would be best served if supervised by an older, more experienced cook, in order to ensure safety. The caramel sauce lesson requires working with molten sugar, which is extremely hot and extra care needs to be taken to avoid burns.

I will be offering office hours to students who would like to talk with me during the class.

Refund policy: If students withdraw from the course, they will be refunded on a pro-rated basic: During week 1, 75%; week 2, 50%; week 3, 25%. No refund for withdrawals in week 4.

Learning Goals

Students should be able to explain the basic ratios of the covered sauces, how to make them step by step, a basic understanding of the chemical process happening, how to modify the basic recipes to your own taste.

Parental Guidance
Parents, this is a cooking class and your child will be expected to cook. If this is not something they are already trained and comfortable in, please supervise.
Supply List
Basic kitchen tools and stovetop will be assumed along with the food supplies for the recipes
External Resources
Learners will not need to use any apps or websites beyond the standard Outschool tools.

Hello! I have been teaching in various capacities since graduating from UCSB in 2000. I have lived in multiple countries and have visited a good bit of North America. I speak Spanish, and have studied Mandarin Chinese and Japanese. Currently I am a public high school teacher and my subjects are health and anatomy. I love Albert Einstein's quote, "Education is not the learning of facts, but the training of the mind to think." I hope to help all of my students learn how to think in this wonderful crazy world we live in at least a little bit better. A personal tidbit about me is that my favorite class in college was Parasitology and I almost went to go get a Master's specializing in infectious diseases... but then I met my now-husband playing paintball in a sugar cane field when he shot me in the chest!  :)
