Class Experience

I will teach students how to fuel their bodies based on the principal of eating in abundance rather than deprivation. This means finding healthy foods to eat in abundance thereby allowing students to forget about depriving themselves of less healthy food. I will begin with a short discussion of nutrition science for the sake of being on the same page about what constitutes "healthy food". Students will learn how to read labels on the back of food containers, how to plan ahead for their busy life, and how to learn to enjoy healthy food. This class will emphasize whole plant foods, but it will completely accommodate for omnivorous diets as well. I will teach based on brief student discussion and then a more in-depth lecture. Mostly, I will give practical and reasonable advice from a formerly busy high school student who was also quite health conscious. The class break-down is as follows:
Class Break-down: We will breifly start with facts and information regarding the human diet. This lecture/ discussion will focus on developping an understanding of essential nutrients and how to define "healthy eating" based on recommendations from the consensus of scientists. The larger part of the class will be focused on discussing practical tips and tricks for healthy and nourishing dietary habits. Some examples of class material will include, 'How to Eat Healthy at Restaurants', 'Ways to Enjoy Fruits and Vegetables', and 'Being Prepared to Eat Healthy'.
*IMPORTANT NOTE*: This class will not discuss restriction or calorie deprivation in any way. The only notes about calories will come from determining which foods are better at providing long-lasting energy and nutrients.

Learning Goals

The learning goals are discussed thoroughly in the class description, but its worth noting that the learning goals will be accompanied with informational handouts for continued study beyond the course.

Supply List
No supplies are needed unless students want to take notes, in which case they will need a pencil and paper. I will encourage students to reconsider some of their dietary habits, so they might want to buy some different things at the grocery store! Of course, that won't be mandatory or enforced in any way.
External Resources
Learners will not need to use any apps or websites beyond the standard Outschool tools.

Teacher expertise and credentials
I have a Bachelor's degree in Chemistry from Missouri State University. While completing my degree I studied biochemistry and the chemistry of agriculture of edible crops. I taught Creative Movement in an after-school program for students of various ages for 4 years. This class was always accompanied by a healthy snack and a discussion of health and nutrition. Addtionally, eating in a way that is both nourishing and fufilling is one of my favorite hobbies.
